Not really. Just different.
It's more primitive, for better or worse.
Less animation and showing off of technology and budget, but also much simpler and arguably duller side activities. Less rewarding hunting, less interesting random encounters, less reason to even bother exploring or picking plants, no fishing, no weapon customization, no outfit customization, no cooking or need for meat or items.
Mission structure is still the exact same. You still have to distract the lawmen at the train station the way the game tells you to. You still have a 3 minute ride and talk at the start of every mission. You still sit behind cover at a set piece and pop people in the head.
You'll like it as much or as little as 2.

The cattle missions were bullshit because the scripting meant no matter how good of a job you did, story scripting and/or RNG would have a cow stray from the herd.

Also, not enough farm shit in either game. Missed opportunity but Rockstar lost its balls after Gay Tony.
