You should start with Dark Souls 2, aka PEAK Souls 2. You can safely skip one, considering Dark Souls 3 has moments that reference and explain what happened in Dark Souls 1 just in case the player didn't play it, considering it was quite old upon release.

Dark Souls was the best version of the souls multiplayer experience and that's because it wasn't just invasions, but a whole system of mechanics that invasions were a part of.
A good chunk of it was broken but this like Vagrants, Way of White Coronas, Gravelords, and pre-dlc rewards for giving over humanity which incentivized invading for non pvp-tryhards anyways, should of been iterated upon instead of going full honorable duel farming.

What's the problem? Go beat it on the newest version, then downgrade to v1.0 and beat it again
