Or rather, it's somewhat between Street Fighter and an anime fighter. Compared to SF, the combos are long (especially if they end with a super, you can really take a simp casually while getting combo'd).

SF6 have some long combos as well, like Guile with his install and lvl3 is ALWAYS 10 seconds long while in Granblue if initial hit will kill there's no cinematic.

GBF has less players than Street Fighter since will always have more players even if they release absolute shit.
Both games have baby mode controls. Both games have short combos on average and are easy to learn.
SF6 has a better single player mode if you're fine with fighting bots and making your single player OC. SF6 is also really ugly, some characters look fine then you see Kimberly. It's pretty tame gameplay wise unless you fight certain characters (total akuma death). Drive rush is an annoying mechanic but every modern fighting game needs a shit mechanic.
Granblue looks infinitely better than SF6 but the gameplay is much more anime, ultimate skills are belligerent as fuck, 66L is this game's version of a shit mechanic.
I personally prefer Granblue but the good thing is that Granblue is completely free if you're not computer illiterate.

I played both and decided to buy neither.

The objective answer is try the free version of Granblue and hope the weekly rotation of characters has something you enjoy. And if you aren’t vibing with it at all, then get sf6, honestly though base rising which is like 30 characters is 20$ on sale last I checked. It’s certianly not the worst purchase you can make for that even if you don’t like it.

As someone who didn't play a lot, I disliked how every other super and ultimate move felt like a pop quiz for 'do I dodge this to punish it or will dodging get me raped'. Dodging in general feels like it's designed just to add knowledge checks to the game more than anything. It's a beginner issue, maybe, but it was annoying as fuck.

Rising is a prettier game but one thing SF does way better for me that nobody else mentions is that hits just feel so much more satisfying to land. I don't know exactly what it is. Hit confirming Cammy 2MP or even jabs into spiral arrow is a much bigger shot of dopamine than doing practically the same exact thing with Kat.
