Arkane made games that weren't profitable for years because they had people at Zenimax protecting them and letting them make immersive sims, otherwise a completely dead genre in the AAA.
Either because they couldn't be protected anymore or because Microsoft got involved, they got told to make a live service game. They didn't really want to make it, so it was shit. They instantly started developing on an immersive sim after it released only to get canned because their "money maker" project flopped.

When a company buys another company the company being bought does everything possible to make short-term profits in order to pump up their valuation. That's what Bethesda was trying to do with Redfall. Problem is that since they're retarded business majors they thought they could simply copy other successful games (make it multiplayer live service!) and it would automatically pump out money.
So yes Redfall is a result of the acquisition even if it wasn't Microsoft themselves making the decision.
Starfield was genuinely a bigger hit to Bethesda's image than Redfall. People had low expectations for Redfall from the first trailer so when it turned out to be crap nobody cared. Starfield being extremely mid after the horrible launch of Fallout 76 has people very nervous about Elder Scrolls 6.

The closest homage to this version of Van Helsing is ironic enough, Geralt from The Witcher, he can't rambo toe to toe with vampires and has to use tricks to defeat him.

You just described most of Arkane games. Most of enemies you fight in Dishonored are just bunch of humans, reskinned over and over again. It got even worse with Prey, where the enemy variants were just big alien blobs and small alien blobs.
Redfall even has side quests given from npcs, final boss, ending and everything you see from a single player game.

No, Arkane's founder is Raphael Colantonio, same guy directed Dishonored 1, Dark Messiah and Prey.
Assets refers to more than just the character models (and reskinning an NPC/enemy is arguably not 'asset reuse'). Dishonored levels felt distinct from one another and outside of elements that would be 'reused' in reality as well (eg., apples, cigars, etc...) the environments did not reuse assets very much at all. Certainly not to the extent that Redfall did.

This company have always been prioritizing single player games and if you look back at Redfall in retrospec, the game is not even that big of an arena looter shooter, it still had single player campaign. Nothing about the multiplayer looter shooter aspect prevented it from being very similar to Arkane's other games' level design. Nothing about it being open world prevented it from being like Arkane's other games' level design in regards to accessing various building and areas. There is absolutely no reason why the higher ups direction to make a co-op shooter resulted in the bland, boring shit Arkane created. They already had workable templates to adapt from Mooncrash and Death Loop.
Redfall is shit because Arkane wanted to spend more time designing their DEI crew and making a statement about capitalism while throwing a shitfit about having to include a couple features they didn't want in the form of co-op multiplayer and diablo loot. Arkane's twisted priorities resulted in decent talent leaving, and incompetent talent too stupid to just boot up older games and go, "How can we put some of this level design into our Gothic New England town?" and then do it. Nothing about what the executives wanted included prevented or was incompatible with the game still being an Arkane game in essence. Which tells you all you need to about Arkane's professionalism and why their games had been steadily becoming more and more shit prior to Redfall.
