The geometry is only low polygon and flat because of the limits of the Nintendo 64. Nintendo made plenty of silicon graphics promotional images where the level maps didn't look like a series of prisms.

I'd be very surprised if that were the case, the PC port is totally native, anything can be changed. All I can think of is that a large amount of hitbox complexity might mess with Mario's movement

The engine isn't that bad; it was used up until the 3DS era and ran OOT: 3D well enough. It's just that the way the OG developers used it was crude because they were inexperienced. Ignoring the controls, 64 DS's visuals and geometry are how they wanted it to look.

SM64's code is kind of like Quake's; it got reiterated on to suit Nintendo's needs and can be found piecemeal in pretty much every 3D project of the N64 and DS era, particularly the library for handling collision.

That doesn't make it an "engine". Engines are modular pieces that let you easily add stages, models, music, etc
They need to manually add every piece of asset and the game logic is different in every case. Reusing a single library means jack shit.

To give you an example, most speedrunners avoid using unofficial emulators at all costs, they would rather use Nintendo's shitty emulation than something more accurate on PC.
