How can you tell if you need to jump, parry, or dodge?
Are some attacks unparryable or undodgable, and if so, how can you tell what you need to do?

There are some audio cues but dodging and parrying each specific enemy and each specific attack is something you have to intuit and learn but it's not that hard. You can parry and dodge through the entire game if you want but if you don't want to sweat it the whole time, it is treated as a high risk, high reward playthrough that you could build around if you so chose.

These mechanics have been in JRPGs since the SNES era. Why don't you play video games?

Dodges have a more generous input window than parries.
Parrying is followed up by a counter, dodging isn't.
(Most) Spells can't be parried, attacks can be parried or dodged.
Some characters benefit more from parrying or dodging than others, and you can modify them with equipment that triggers effects and bonuses on parry or dodge respectively.
Teamwide attacks are very risky to parry but do a teamwide counter which is extremely powerful
Multihit combos need to be parried flawlessly to do a counter so dodging is more consistent

How about you just play the game, it'll guide you through all that shit.
As for always using parry, no, I didn't, I'd often switch to dodge for the most dangerous attacks because it gives you a bigger window and I'm an old boomer with a slow reaction time.

Seems weird they give us the choice to either dodge, jump or parry if it has the same effect.
I guess you have to get hit at least once to learn combo and attack patterns and then you have to jump, parry or dodge.
But if you can parry every single attack in the game then it makes no sense

Just build for HP and defense if you can't stop being shit at video games. There's even a pictos that gives you AP for getting hit instead of parrying or dodging.

It doesn't. Dodging has a wider window but doesn't activate a counterattack. Parrying gives you AP and if you parry every attack in a string then you get a counter. Jumping is for specific attacks with an indicator and let you counter after each jump.

Jump is a "special" counter to some attacks and it's incredibly obvious and easy when you have to do it.
The choice to parry/dodge depends entirely on how confident you are with the timings and if your equipment enhances one or the other

They will become unparriable and undodgable and the only thing you can do is just take it. Limited to very few attacks. There is no one or the other though

Technically yes but you want to test the waters with dodging because you might get blown the fuck up, there is literally no way you are going to first-time parry everything in the game with how tight the timing is.
