I played the Saga 2 remake, it was really good.

I remember when I first tried the game on ps2 and my jaw was on the floor not because I liked the game but more like out of confusion. "who is this game made for??". Not my favorite title in the series, it's the point where DQ started getting more linear and story focused and 5's story, outside of a few key scenes, isn't that great in my eyes. You're going to get more out of the DS version compared the SFC since it has extra content, but I liked the PS2 version the most.

I just really don't like immediate turns in rpgs. it's just so lame. and the quest markers for talking to villagers were lame. bp refills before bosses were lame. the remake is lame in many ways. I did like the faithful recreations of areas, many of them being 1:1 to the sfc version which added a lot of retro charm. but overall I would rather play the original sfc version over the remake.

Safest way to do the mermaid quest is to start it at the very beginning of a generation. It's a long quest with multiple parts, so if you've done other stuff in that gen you could risk a timeskip midway-through.
Finishing the mermaid quest also always forces a timeskip, so you're essentially dedicating a full generation to it.

If you want to get ahead with part of it, go to the Savannah and do the quest in Ostro.
It unlocks a city which you'll eventually need to visit during the mermaid quest. That way you reduce the amount of extra stuff you need to do during the mermaid generation.

You can generally do part of most quests in RS2 and complete them in a later generation without any negative effects.
The only ones I can think of that you can't are the mermaid, Cumberland and volcano quests, where getting a timeskip midway either fails the quest or forces you into the "bad" end of that questline.
