I've been "learning" it for about 2 to 3 years now, but that really just entails learning all the Hiragana, Katakana, and doing Ankidroid every day to learn Kanji. Can't read much at all though because I've dedicated absolutely no time to actually reading and learning proper grammar lol one day I will tho

Then start reading actual Japanese works like manga or light novels. once you've done it for a year, it'll make sense.

Been studying for about a year consistently and on and off since I was in middleschool I can read probably 60-70% of what's in a game maybe more if it's dialouge heavy
Took me around a year to learn, I think, around 3000 kanji. I had the advantage of already having a good listening comprehension of it though. I just kind of absorbed it after watching animu for years.
I have been playing games completely in JP now for like over a decade now, so I don't have to deal with the shit translations.
I started about 3 months ago, already have hira, kana and some ~40-50 kanji. I have a vague understanding of the grammar that gives me just enough to already piece together sentences with the kanji I know semi-consistently.
I struggle with on'yomi, I should probably try to memorize the on'yomi of the characters I know before I try to do anything else. They're not really all that necessary if all you're doing is trying to understand a sentence as the meaning of the kanji should get you by, but I want to be able to read aloud (not that I ever will get the chance)

Is there a good way to learn while working out? I do a lot of cardio and I'd like to be able to improve my vocabulary and listening skills while doing so. I'm not advanced enough to listen to Japanese-language podcasts or even simple books without needing to constantly pause and look things up, so I'm interested in material targeted toward learning.
I have no experience with anything except textbooks, a few college courses (years ago), and self-study methods like handwritten flashcards or Anki.

Learning Japanese is a difficult and time consuming language to learn, especially if you're coming from only knowing English and other European languages. You have to make the decision on whether it's worth it to you. But in my opinion if you want it *only* for playing video games then you shouldn't bother. It will a few years of study before you are proficient enough to understand most video games without needing to constantly look up vocabulary.
That being said if you feel like you're up to the challenge I can't stop you, start with all of the kana and branch out from there, last I checked there were guides on Anon Babble that might help a beginner get his footing.

Full time humanities is at most a tenth of time and effort involved in real study like STEM. Four years would be 480 credits and a credit is an up to 10h of study. Normalizing for humanities, which is a hobby not a real discipline, you're looking at 480h at the high end of the spectrum. For many people it would be significantly less.

Chinese has better translations of foreign words (very few transliterations)
Japanese grammar is probably much more straightforward and okurigana gives it flexibility. Katakana is double edged, it makes it much better at transliterations, but they overrely on it these days and it feels soulless to see katakana English everywhere.
