I'm pretty sure there are jrpg's with wrestling classes. In any case, the appeal of wrestling or sumo isn't really showcased well in most turnbased games. you have to animate seperate enemy animations for getting hit by wrestling moves, it's easier to do in an action or fighting game
It's partly because it's seen as a holy ritual/sport, but also to preserve some modesty. Ancient Greek athletes competed in the nude, for example, even the wrestlers

He's back wrestling again and is (West) Makushita #10. He's consistently managed to go 6-1 and it's pretty impressive.
Enho is my mum's favourite Rikishi, so she always asks me to check his ranking before a tournament, and to watch his matches with her

I can't say I care about sumo in real life but I always enjoy hand-to-hand fighting in any game that allows it, including grappling and throwing. I'd love a class that does what sumo does in a video game.

I bought her specifically in KoF15. Was worth the $6, but sucks she came in right at the end of the game's life when the online was already dead.

Not a JRPG, but Kunitsu-Gami: Path of the Goddess, has it that you can have Sumo Wrestler units, and that's a relatively recent game.
