The piece of Verso's soul is constantly painting, and that means the canvas and his creations can continue to exist and develop. However, the people of Lumiere are not Verso's creations but Aline's. The game specifically states newborns are also her creations (when Clea says that Aline can only protect her most recent creations, and the scene of Alicia going into the Canvas and being reborn as one of Aline's creations), so the people of Lumiere actually need the Paintress to paint them into existence.
Many people are arguing for an ending where both Aline and Alicia fuck off from the Canvas, but this would mean the end of Lumierians, unless kid Verso takes over (unlikely as it's stated only Clea can paint over someone else's creation), or either Aline or Alicia leave a piece of their souls.

This is semantics. Gustave dying is a twist because it’s a subversion of the heroes journey. While people expected someone on the team would die the idea was that their death would be at the “appropriate” time. Gustave dying in at the end of act 1 which is like 10 hours long is absolutely a twist. The biggest proof of this is that in early trailer footage Gustaves profile and model show up in fights he never gets to actually be in like Duelist.
