I think we all missed a point big time. "Lesbian representation" is actually not an important part of Alphys/Undyne relationship. Alphys was created as sort of universal self-insert, both for Toby himself and the game's audience, she was designed to be as relatable as possible. So her bagging Undyne was both a self-indulgence on his part AND his gift to us, his players. Unfortunately, like many his intentions, it ended up being misinterpreted by fanbase at large.
