If you use a XP mod. (XP rewarded on kills/quests), it makes questing alot more rewarding compared to just killing/training skills.
Nothing really fixes vanilla quests being poorly written. Some mods fix questline progression and inconsistencies. Like AYOP. There's plenty of mods to simply add "more" and snuff out the lack of quality with sheer quantity. Like adding Bounty Board radiants in each hold for RP.

You can, but you have to cast a million free spells to kill things at later levels/higher difficulties. Even ignoring the bullshit that is stealth archer any other form of damage is wildly more efficient which feels pretty bad for a skill called Destruction.

Oblivion has the worst enchanting system because it has all the limitations of Skyrim but Enchanting is absent as a skill so there's no power scaling.
The level scaling shit is abhorrent and permeates all aspects of the game. It is insane that they did nothing to address it in Remastered.
The magic system honestly is kind of worse. It has spell-making technically but it's so insanely restrictive it almost doesn't matter. Skyrim at least has dual casting, and stuff like channeled/cloak/rune spells.
No diagetic forms of travel; fast travel is practically forced. Both Skyrim and Vvardenfell are more interesting to travel on foot through.

You could say the armor enchants kinda suck but you can get absurd 3x 25% elemental shield sigil stones at lvl 17 and with basically any armor you can get to 85% physical resist for a pittance

Enchanting feels like an afterthought and it's not even a skill unlike Morrowind and Skyrim. It's kind of dumb that your custom enchants lose out to the best Sigil Stones though.
Level scaling is less fucked in the Remastered since you can't get cucked because you leveled your skills incorrectly so you can only put +2 to Strength on your melee character. So now instead of "everything levels up too quickly and starts wearing daedric equipments and also you can't catch up because you jumped around too much" now just have "everything levels up too quickly and starts wearing daedric equipments" because you can always reach 100 strength without some weird metaleveling.
The base magic system is better in Oblivion if you combine magic with other weapons (which is how I assume most people play), it just lacks special effects like rune traps and cloak. Dual casting is honestly just "bigger number" and that's it (it does look cool though), in Oblivion you just make a stronger spell instead. Dual wielding spells is arguably better for pure mage though.

Could try a minmaxed autism build. High elf/Atronach. Lvl 30 spell drinker amulet/sorcerers ring, highest lvl umbra, plain ring + armor and shield of cataclysm all with +50 magicka sigils. perfect madness bow with drain health 30 sigil. You'll get 829 magicka unbuffed (849 with hermeus mora quest) and a bit over 1100 buffed, even more with potions. Early game I just leveled in bravil using the statue to regen mana until lvl 20s leveling magic skills and training blade/heavy armor on summons then farmed sorcerer ring on anvil ghost ship reloading the chest for about 20 minutes. Leveled more till 30, then got spelldrinker amulet to max spell absorb. Can restore your mana with telekinesis and make custom spells with telekinesis as first effect for infinite cast, can spam retarded spells like weakness to magicka 100% + damage health 100 points + fire, shock, and frost 100 points, free cast paralyze, invis, buffs, heals, etc. If you have deluxe edition you can just run order or cataclysm armor/weapons from level 1, can replace them every few levels for a better version. run mage bane greaves from fryelight trapdoor chest or cursed daedric gauntlets from swamp hole chest near entrance if you want 95/100 spell absorb before you get the lvl 30 spell drinker amulet. Not a balanced build but fun to play if you've already played the original a bunch or just wanna try something ridiculously op. Max mysticism asap, rest doesn't matter too much, just pick majors that matter, blade, heavy armor, conj, etc. Never pick mercantile as a major, can just max it easily using low mercantile merchants like the guy from battlehorn dlc who gets 3k gold once invested. if your low level, all the 'good geared' bandits keep away since its not worth them wasting their time on you
as you get higher levelled, the less well equipped bandits start knowing to stay away from you, while the better stocked ones take an interest since by then you actually have tons of rare or one of a kind artifacts/loot

I hate the exit of convenience at the end of every Skyrim dungeon. Harms immersion and dissuades backtracking which helps find things you missed on first pass.
Oblivion's dungeon bosses could also actually drop amazing gear at higher levels, and the chest loot is much better as well.
Dungeons in oblivion were dark, scary, and dangerous even in stealth mode.
Skyrim lacks variety and depth in this regard.
The loop Skyrim gives is good granted, but Oblivion gets the nod in this category.
I don't have a problem with the gear showing up on fodder enemies like bandits because anyone doing the main quest is flooding the market with daedric gear anyway.
The only thing that really blows about the scaling is the leveled loot. Not just because it means scaled quest rewards end up being shit more often than not but also because some shit is just extremely annoying to find without reset farming dungeons, like Master-tier alchemy tools.

Magic skills gain exp proportional to mana cost in the remaster so leveling them up goes pretty fast now assuming you actually use the skill a lot. So stuff like conjuration/destruction/restoration. Something like Alteration or Illusion probably still feels too grindy.

with the new dlc quests exclusive to the remaster the wait for those leveled items isn't so bad. Getting cataclysm or order gear and replacing it every few levels will keep you on the top end at any given level. it is gay waiting to go through some content though just bc you want the best version of some gear, I don't disagree but luckily leveling can be done quickly all the way to 30 with the most builds, I'd argue leveling is even faster in the remaster. Leveled gear effects mages most imo, mainly transcendent sigils for +50 magicka to each slot and lvl 30 spelldrinker amulet, lvl 25 necro ammy, etc.. For unga melee you're mainly waiting on umbra but daedric/order/cata/madness is really close till then. Ranged or sneak melee can just use any of those and breeze through too, with how easy you can max stats now you'll do tons of damage early and won't be missing out much while waiting on specific items. Any item in a build that raises a skill above 100 is pointless anyway unless acro/athletics, which is still pointless imo. And anything that would raise a stat above 100 unless intelligence is mostly pointless too, these sort of bonuses are useful while your build is still being fleshed out but not so much when you start hitting 100 in preferred stats and skills. I wouldn't really call anything from thieves guild or db necessary for end game on really any build vs other available options + sigils. The main leveled items that matter are umbra if you want the highest base damage melee though you're giving up damage from enchantments, or very stat specific items, like if someone wants 100 spell absorb or 100 reflect damage etc. But alot of those items are random loot or gear that's in a one off quest. There's just not alot of good reasons not to run certain lengthy questlines outside of a few very specific autismo builds and it's mostly mages guild that has any worthwhile end game items.

Nah they level fast too, there's higher cost spells for all Magic skills so all can level pretty fast, if cant find something to buy you can just make a higher cost spell.
Vamp is cool but you won't get much bonus past 100 on skills/attributes (excluding int which Vamp doesn't raise) other than +1 to phys damage and running or jumping better. More beneficial early/mid game, more cons than pros later unless you just like being a vampire.

more random encounters (assassins,thalmor,patrols going around,bandits,hired thugs,vampires) wich you'd notice only bandits asking for money and life only happens in oblivion (not talking about npcs spawing when you enter a cell)
more people on the road as infected,vigilants of stendaar
deadric quests are better handled (throught scripted npcs or object wich gives you the quest instead of oblivion : find the shrine and do the quest)
dwemer lore&exploration and blackreach is amazing really makes you feel discovering a really ancient civilisation that has been buried and the mystery around it (comparing to ayleids ruins that actually gives you little lore or from i remember there's not much quests about "let's find out about it")
crafting (i like it and add a nice thing in the game even if it's a bit tedious in skyrim)
dragons as mini boss are a really nice touch ,something oblivion doesn't have
exploration is much more dense,you've got many more point of interest but i felt towns you'll find in oblivion had a much more interesting stories
the civil war questline is top notch ,something that doesn't exist in oblivion
werewolf is a really good touch,if you wanna roleplay as one
shouts are a fun mechanic
if we compare og oblivion with og skyrim ,skyrim has better graphics,movement is better

I did the Kvatch quest at level 25 and the game was running at like sub 10fps in parts on PS5 due to all the enemies on screen and all the particle effects from the electric golem enemies
