What build do I need to use to actually have fun with this game? I've tried to get into it several times before giving up an hour in, and I refuse to install mods to change the combat.

just use the weapon you put a major. If you put long blade and blunt. Use a long blade and blunt weapon. Have your green stamina bar full and hold and click when fighting before releasing. Congrats you mastered the combat and can clear everything
You use whatever you spec into. Never fight when you have no stamina. Thats really all there is to it.

People got excited for Oblivion Remastered and started playing it but then remembered that Oblivion is garbage so they switched to Morrowind.
Narsis is kino. Unironically probably the best, most dense city in any CRPG, with shit to find and do around every corner. But it sounds like Poison Song isn't too far off, and if you want to do a full Hlaalu playthrough, it may be worth waiting. Maybe look into if they're planning on saves to stay compatible with the next release?
The bow's really good at fucking up pterodactyls, and trust me there's a lot of those.

if you wanted to give those a go, and wait for Wealth Beyond Measure for your mega Hlaalu playthrough. That way you don't need to go through the Hlaalu questline twice or put your progress with it on hold.

I was thoroughly entertained for all of Tribunal. You literally talk to every NPC and they give you a zany quest with great rewards. The main quest itself is fun and pretty fast paced. Bloodmoon is the snoozer IMO. They just drop you off on island with copy paste crypts and force you to do a gay Viking ritual.
