Right next to Goodsprings behind the young cazadores is the best early-mid game knife. Down the road is the best early-mid game brass knuckles.
You get a ton of late-game equipment early, and XP from destroying Mariposa.
By the time you're got a Grenade Machinegun and enough ammo to be worthwhile literally any build besides Unarmed has a weapon that can deal with Cazadores without issue

If I recall correctly Old World Blues has a perk that confers poison immunity, and its alternative also grants it if taken in concert with a certain perk and enough endurance.
I hated the sounds it made when they poisoned you, so annoying.
It stung my dog once and I couldnt heal it with stimpacks or cure the poison so it died and I had to reload.

Cazadors will do a fuck ton of damage and can even poison you or some shit
You can kill them somewhat easily with the dlc weapons you get like that grenade launcher tho, makes for a quick trip to vegas
Cazadors are the grim reaper of lowbies. Once you have good armor and HP pool(not to mention automatic weapons and a good supply of ammo) they're not nearly as dangerous.
That said, the image isn't exactly wrong looking at it from a lore/reputation perspective. Cazadors were genetically engineered to be made of 400% bitch and 666% angry, and their only purpose seems to be to assfuck anything that isn't a deathclaw.

Game literally tells you not to go North from Goodsprings, by those Danger signposts. And even if you get through by the main road, from Sloan, the guys from Sloan would stop you and warn you about the Deathclaws. If you tried any other way, going through hills, you'll find the Scorpions and they have high armors too.
Cazador is a nightmare in Hard, more so than Deathclaw. You're likely to hit the legs and cripple the 'claws more often to slow them down so you could rain bullets on it. With V.A.T.S. With those bugs though, even with VATS it's hard to hit the wings.
Playing on normal they could get trivialized even early on. Get a fucking shotgun, VATS on the wings. Stops them completely. Just tread carefully and bait one at a time. If you ran out of AP, no VATS, you're fucked.
But really, the intended path is almost like the letter J. Path of least resistance. Goodsprings > Prison > Primm (get ED-E) > Mojave Outpost > Nipton > Novac (get Boone) and the way ahead is more or less open after that.

Cant you avoid both the normal 'chosen' route and the deathclaws and cazadors by crossing over hidden valley and blackmountain just to arrive outside new vegas? I swear I did it once in one of my first play throughs but never was able to repeat it without being detected by something scary.
What's a good gunslinger build for NV? Also some essential gunplay mods. I just want to crit&delete people with my big iron
I did it once and arrived near the giant ants which I killed enough to level up. But it’s extremely risky because there’s a few patrolling cazadors that fly west of that farm like all the way up and down those fields
I never tried it again because the only way you can kill those at low level is with a fucking grenade launcher it’s just not worth it

You're not supposed to find this route, even more in your first playthrough. Mutants roam the place and the hidden NCR safehouse is literally right there.
The J route is the safe, intended route because it's the one that makes more sense, so it's only natural. Outside Goodsprings you immediately find the Gangers and it's only natural you head for the Prison. Even if you skipped it, you'll hear the issue from Primm right ahead, considering you have to help them get the new Sheriff. You'll find the first appearance of the NCR in this place, and the Mojave Outpost is involved with Primm / Prison. After resolving that issue, you naturally go to Mojave and Ranger Ghost tells you something about a Legion and as you go through Nipton you'll find them. And that's all just through common sense and pure will. Good game design as they slowly reveal some lore and story and the main players and factions trying to wrestle the hold on Mojave. But the main quest from the Doc literally tells you to go through Primm > Nipton > Novac > Boulder City anyway. You're more likely set up with gears and skills by the time you reach Novac.
