By necessity. There's no such autist that can implement efficient multicore utilization/scaling in a video game as complex as DF. This is due to the largely dynamic nature of connected events, variables and calculations in the game logic, making their availability and activation essentially impossible to predict (and if you try, you introduce so much idle CPU time and computational overhead per tick, it quickly becomes more efficient to run everything on a single thread again). Calculations may depend on so many variables that to ensure that events launch in proper order, you'll have no choice but to run them synchronously on the same thread.
The one thing that's piss-easy to multithread is audio. Also, if you know for sure that certain systems in your game logic never co-depend, you can generally multithread them. These are surprisingly rare, though.
Roguelikes are weird because they are one of the only types of RPGs where you sometimes HAVE to run away and you HAVE to use consumables
