I don't think anyone has gotten to endgame yet, but it's probably pretty easy. The original fantasy life had a few challenges late game but nothing too crazy. If you want to make the game more difficult your are going to have to seek out quests, enemies, etc. that are above your level.

the open world can have strangelings in shrines, dungeons, or just random chests in the middle of nowhere

all your party members need to be geared up

crafting party members will give you a massive stat boost if you use them while crafting

gathering party members will help you collect shit or you can instruct them to go do a node by themselves

if you are gathering party members that aren't gatherers will cheer you on which can debuff the gathering node or buff you

crafting and gathering will fight but they aren't good at it

you can gain an EXCELLENT when gathering by doing "overkill" damage
so you want to get ore / fish / trees to as low as hp as possible THEN hit them with your highest damage attack
if you do enough to properly "overkill" the resource, it counts as an excellent and you get bonus loot

this is where the charged attacks for gathering come in handy

Reminder that theres classes level up in two different ways, one from just doing the activity, and the other from doing quests (specific tasks), you need to do quests and turn them into your life master to actually rank up. You can check your life quests from the quest menu when you are in that class
