I genuinely don't think Mario Kart is going to be enough. Nintendo obviously thinks it will be, as they seemingly have absolutely nothing else exclusive for the Switch 2 at launch and only Donkey Kong a month later. A $450 Mario Kart machine doesn't have a lot of appeal.
Early switch units were way easier to jailbreak. They fixed it in a design revision soe time later. Buying now means you'll have more of a chance of getting one that can be hacked easily.

consoles are often sold at negative profit because they know you'll need to buy games and live service subscription for it and they hope that will make up for it.

There's also that Donkey Kong game, I think that releases at or near launch. That's one of the few announcements that actually interested me, and everything else that was cool is 2026.
