Beta 1.7 is objectively the best version of the game, but also objectively I've played it for too long and more than exhausted the fun value I can get from the little amount of content it has.
1.20.1 is very moddable, and you can basically turn it into 1.7, but with mods.
Like it or not, the ideal Minecraft experience is modded.

I don't get what's supposed to be so bad about hunger. It's annoying until you have a base set up, then it's just a second or two of downtime every few minutes. Sprinting makes so many other parts of the game so much faster I can't bring myself to mind slowing down to eat rarely.
If it still worked like it did in the adventure update and drained below the regen threshold in like two frames then I would get it, but it will sit full for awhile if you're not using shit food.
But it's so easy to manage? Literal food everywhere and it makes farming animals matter more

Good for notch making a quick trillion bucks, but also fuck him for giving his game to devils.
Rather than negative reinforcement you should give the player positive reinforcement. Make food/sleep/ give you positive buffs for a certain amount of time. Better food/beds give you better buffs this incentives the player to engage with the systems, but doesn't force them to.
It's the opposite, hunger is at least somewhat compelling at the very beginning when you don't have too much food, but the second you have the barest of farm set-ups it becomes nothing more than just chore, an entirely pointless mechanic.
Although I still wouldn't want to play a Minecraft with intrusive hunger mechanics no matter how you slice it. Maybe you could've made it so food still just heal you, but the animation is slower or faster depending on the food, and maybe some positive potion effects could be cool too. Just give me options that I want to choose between instead of forcing me to do the one thing you want me to do.
And sprinting is it's own problem too. When you can't sprint, the movement speed of most enemy mobs are a lot closer to yours, so you begin to think more even about your most basic movement to stay safe. But when you can sprint, literally just sprint in the other direction and you'll be fine, every single time.
Don't get me wrong, I don't have any problems with being able to move faster, but the implementation fucking sucks.
Some beta themed modpacks disable sprinting, but give you other ways to move faster and they're always 100% more compelling. I remember one that gave leather armor a speed boost, so when you wear it your basic movement becomes about as fast as sprinting, but of course you have a lot less protection than every other armor. It actually made leather armor my favorite for the mobility it provided, which is honestly impressive.

Some games do hunger well but the majority of crafting games including minecraft make getting food trivial after the first hour and it just turns into a chore.
I guess I never thought of Minecraft as a high pressure game. I just didn't usually engage in combat without first building a favorable combat space. Even with caving I tended to dig around the lower level of the cave and make peepholes mobs couldn't fit through while I was lighting it up. I figured the point was that mobs would have you outmaneuvered if the terrain wasn't firmly yours. Sprinting made it so that I could simply fight a mob, but fighting a mob is still a worse option than making the terrain favorable on the long term. It's just faster.
Basically to me it lets me have interactions I was already only going to have once faster, without altering the dynamics of how I play on the long term.
I will admit actually eating and having a consistent supply of food is busywork but I think we're only about one more stage of processing and food value compression from a good place.

In minecraft it's at least an interesting way of regulating healing, your health regenerates by depleting your hunger but you can only restore hunger directly (outside of specific potions), so you can ONLY use resources to recover health slowly and in a safe setting. It makes face-tanking damage basically impossible, which is a really good thing.
Actually the only problem with hunger mechanically is that your health depletes when it hits zero, but that's not really the context you're most likely to interact with it.
What do you guys think about the swing timing mechanic?
Hunger sucks sure, but forcing me to play a repetitive timing mini-game for EVERY SINGLE SWING is some next level retarded game design. To this day I'm still absolutely baffled by how terrible of a mechanic it is.
If they really wanted to give swing speed variance to the weapons, why couldn't they just do that? You literally have no choice in the matter. You either time your swings to the exact timing mojang wants you to or you die.
It's easy, boring, repetitive, a chore, and you have no other choices. All the worst aspects of hunger except every single time you swing a weapon.
I like it, I just think it suffers from bad animation which makes it feel arbitrary. Plenty of action and fighting games rely on the concept of "swing timing" by putting recovery frames on the end of an attack, so throwing it too early leaves you exposed as you cannot act a second time until the animation is over. Minecraft doesn't bother with the animation, it just puts a stupid little meter on it, but conceptually I think it's fine. A good mechanic dressed up in bad presentation that everyone has gotten so familiar with they've stopped being annoyed by it.

That is being very disingenuous. In those games the timing of the attacks varies from attack to attack, and there's a reason why you'd want to mix up your attacks for different purposes. You have choices between different moves with different uses, and there is a timing requirement to execute them.
Minecraft literally just tells you to do the EXACT SAME TIMING for EVERY SINGLE ATTACK.

Hunger should remain, but you should be able to mitigate it entirely by the lategame, just like how you can already give yourself infinite water breathing with turtle shells and conduits so you never have to worry about drowning again.

Sword, axe and bow have different timings, and jump attacking also has different timing. It’s not the most complex combat system ever conceived but it’s more involved and interesting than shit like Skyrim, which is what it’s most comparable to.
A hunger-reducing enchant would actually be pretty cool.

I never even think about it. 15 minutes running around a grassland killing things gives you 20+ hours worth of food. I’m not even stopping to farm food when I get food, I’m farming leather or feathers, looking for dye, or anything else.
Valheim does it really well. It doesn't nag you about hunger but your base health and stamina are very low without it. Eating better food gives you better HP and stamina buffs, and different meals give different buff values. But if you're not doing anything that requires health or stamina you don't have to waste the resources.
