I'd say they're challenging, especially for a casual audience. Their strength lays in the Player's choice to make it more or less challenging. Typically in Souls games you find a really good "easy mode" weapon and/or ring very early on (DeS this is the Crescent Falchion and the Cling+Cat's Ring; in DS2 it's the Fire Longsword, Crimson Parma, and Chloranthy+Life Ring), which has been placed there very intentionally to ease you into the game. You of course as a Player have the choice, and by design, to not use those items, making the game more challenging. Later on in most Souls games you have rings/talismans which actively make the game harder (taking more damage, enemies agro at greater distance etc), so an masochistic players can really crank the challenge through the roof if they want.

The difficulty being dynamic to the playstyle of the player and giving the player OP options like summoning, or minmaxed builds only really works with open world, open ended, and character build based games.

Sure, it is an interesting way to tackle having a dynamic difficulty by giving players choice in the ways they play. But it wouldn't work for most games. You decide your difficulty by the routes you take in the open world to complete the game, how much you minmax, what OP options you take advantage of or not, and how much you grind. That's all the factors that are coming together to make the difficulty of Elden Ring up to the player by how they play.

It would be a non starter in most games. It wouldn't work. For this to work, the game would need to be either open world, or have a character progression and build system or both. Try doing that in a platformer that's not some metroidvania shit.

East is good when the games are well balanced, but FromSoft's game balance is dogshit in Elden Ring, so I'd much prefer the West solution.

DMC and Ninja Gaiden. Know how I know this? Games like DMC and Ninja Gaiden forcing you to play on normal difficulty to unlock higher difficulties. Fuck, even to get master ninja mode you have to beat the game on normal, then hard, then very hard. Which is bullshit. People should just be able to jump right into Dante must die mode or master ninja mode. And if those games just had one normal mode they would be even worse.

I don't get help from streamers telling me where the best gear is because they used cheat engine or scanned files. I also don't get motivated to keep trying from hundreds of dollars in donations when I die. Those things need to be factored in.

Games really don't get enough shit for having to to unlock harder difficulties. NG is tough but the trudge through it multiple times in a row to get to the real challenge is harder to bear than MN itself; everyone I know who actually tried it completed it eventually, but barely anyone had the patience to unlock it in the first place. If it was unlocked from the start I sincerely doubt it would have the impossible ball buster reputation it has. This goes double for DMD, which is outright not difficult at all if you have any experience with DMC as a whole.

The difficulty slider in Elden Ring is self imposed. You deliberately play with a handicap or self imposed challenge, like no summons, no magic, no death, melee only, no grind, naked, speed run, etc.

This. A good game is hard even when you're using every tool at your disposal. Not playing with just one hand, and having your other hand tied behind your back and saying wow bro this game is great if you just play with one hand. Good games have their challenges carefully curated to perfection. Not throwing a bunch of shit together and seeing what is broken and just leaving it.

I don't know how delusional you need to be when the japanese publishers have been whoring out their IPs for short term gain every chance they got from the start. Doom Eternal has a considerably high skill ceiling, which is why it needs many different difficulty levels. Nobody is going to learn chess by losing to masters all the time, you start off playing with people with similar skills and in single player games this is reflected in the difficulty you choose.
From Software's games follow the logic of dungeon crawlers. Ironically, you don't need to "git gud" to win in Dark Souls or Elden Ring. You just need to explore the world for your character to get stronger and more competent, while you get more and more resources to strategize with. When people say that you didn't beat Elden Ring because you used the game's overpowered stuff, they're just trying to deny the reality that they're RPGs/Dungeon Crawlers where the player's manual skill is less important than their ability to understand the mechanics and create strong builds.

horror games can benefit from dynamic difficulty, to maintain tension for both skilled players and scrubs
the experience in RPGs is about progression and growth, and as such difficulty isn't as important as the power fantasy, so you can just grind a bit and lower the difficulty as desired

Left is a cop-out, an abdication of responsibility by the developer to design a well-balanced experience. It actively takes the player out of the game by exposing its artifice.

Right offers a well-balanced experience as a baseline, and then trusts in the player's own intuition to adjust the difficulty in the direction they prefer. It uses options within the game world itself to allow players to make the game easier or harder for themselves.
