I do not believe that Kris is the Knight, or at the very least, not the Knight who made the Card Kingdom and Cyber's World Dark Fountains.

In Chapter 1, the Knight supposedly put Spade King and Lancer in power after imprisoning the other kings. Kris and Spade King obviously do not get along. Kris would have no reason to do this if he was just looking for Dess. If he just wanted to get stronger, he wouldn't have needed to put the most tyrannical ruler to defend the fountain, as you get stronger when sealing the fountain.

In Chapter 2, the Knight is identified as the Roaring Knight by Queen, despite Queen not knowing what the Roaring is. Ralsei and Kris seem to be in cahoots, as they talk about something when you are away viewing Susie. Ralsei says that the Roaring is a bad thing, and will end the world. If Kris is the Roaring Knight, he must somehow be associated with the Roaring. But then, Kris and Ralsei cannot be in cahoots. Unless, Ralsei is also lying about the legend of the Roaring, but in that case, why stop Berdly from making the NEO Dark Fountain?

All that being said, I do think Kris knows about Dark Fountains, either from his incident with Dess or from occult research with Catti (less likely). Otherwise I would have to handwave Kris's save file, which would be silly.
As for your theory, it's not possible that Dess disappeared so recently (within the week timeloop), since the spelling bee flashback shows Noelle being stressed at hearing Dess's name back when she was little.

I think a lot of people have lost sight of how, from a completely normie perspective, you'd only know Gaster as a disembodied, unnamed, mysterious voice in Deltarune's intro. I feel like there will have to be more non-secret build up to his character before the reveal to make it more impactful to normies. Unless you believe he won't be revealed at all, but I find that to be an insane stance to take when he seems to be much more relevant to Deltarune.

It's actually entirely reasonable to do this.
On a fresh save file, Kris's name is on the file by default (including if you start from Chapter 2). But it's not a save file like when we see Flowey's save file in Undertale - it has no associated location and the playtime is 00:00. Kris's name is simply used as a placeholder when you start the game for the first time. If you go to the actual file select screen, every save file actually defaults to [EMPTY], and likewise if you delete a file and play on it it will again say [EMPTY] rather than defaulting back to Kris.
I believe that the save file defaulting to Kris's name is not meant to suggest that Kris had actually used the power to SAVE (and therefore must have been in a Dark World before), it's just a reminder that you are asserting control over another character and Kris is not You. The introduction already made the separation between you and Kris clear, but seeing yourself overwrite Kris's name is a subtle push for people playing the game for the first time that this is more significant than it was in Undertale.
Additionally, Deltarune makes it very clear that the power to SAVE is yours, not Kris's. Not only is your name on the SAVE file, you get three save slots to play with. This is clearly a different setup than in Undertale, and unlike in Undertale where all the interaction with Flowey and Toriel at the start of the game loudly and strongly established that the player's power to SAVE was part of the narrative, it's hardly been acknowledged at all in Deltarune. We have a few hints about taking advantage of other save files but there's none of the memory and deja vu that Undertale was famous for. There's still a lot of story left to go, but I think we can say that SAVEing and reseting aren't as important concepts as they were in Undertale.

Let's assume "how Dark Worlds work" is constant. Every Dark World has a ruler, and that ruler is the most important object in the room when the fountain is created. The Card Kings were all of equal value, so Kris put the Spade King on 'top' so he would be the known as the most important and therefore singled out as the ruler. Kris did not need to do this for Queen, since she's the most advanced computer in the lab and has no equal. This is also assumedly why Kris plugged the TV in (so Tenna would be 'alive').
Upon the fountain's creation, the ruler of the fountain also becomes megalomaniacal and power-hungry. Spade King and Queen are both tyrants, and it's stated that Queen only became so power-hungry recently, presumably the time the fountain was opened.
Then, what about the Pure Fountain? Ralsei is the ruler, since there doesn't seem to be anyone else around, but he's not power-hungry. Is this just how the Pure Fountain works? And what about the previous Dark Worlds Kris visited (since Kris must have learned about the mechanics of them somehow). Kris is the only human in town, and therefore the only one capable of sealing fountains, which would grant him Power. But he hasn't done that. And any other fountain (not THE pure one) would have a power-hungry ruler who would want to keep lightners locked in (neither King nor Queen give Lightners an 'out' to the Light World like Ralsei does).
For your theory to be true, there must be multiple Pure Fountains with Pure Rulers (like Ralsei) out there for Kris to 'learn the mechanics of Dark Worlds' enough to be able to perfectly predict their creation. I don't believe that to be the case. I'm not even sure why the school closet is a Pure Fountain. The only (reasonable) candidate for another Pure Fountain would be the Bunker: but bringing Gaster into this opens up a whole new can of worms: what does a Goner become in the Dark World? Does he become a Ruler? I don't know.

Dark Fountains are created with Determination - the creator puts "their will" into their blade and strikes the Earth. It would follow that the Dark World they create reflects their will or their character, in some way.
Ralsei is an empty vessel. He has been shaped without will, he has form but no history.
Except that's not exactly true either. He has been shaped by the most fundamental force in his world - the plot of the video game. The sum of his knowledge, existence, and purpose, is to fulfill his role in the prophecy, and to ensure everything happens as it's supposed to.

The ending is more of a whimper than an autistic bang, and more importantly, the pauses in the 2-3 years leading up to the ending thinned out the fanbase a ton, unlike AOT which got bigger and bigger until the ending exploded. There's a room in Undertale that can't be accessed by any normal means. And even when you do manually edit your room value, you have to bypass an error screen to actually access it. Inside there's that figure that says "redacted" in wingdings.

It's considered debatably canon because their isn't any other interesting secret in the game that you have to do something like that to access, but it undeniably was at least related to Gaster at some point in development, if not an outright appearance of him.
