Because most games are about an individual, and their weapon is used individually rather than in formation. A sword makes perfect sense because that's what people used in real life in these contexts.

Further there's the obvious answer that swords hold a fantastical/mystical position in western culture and always have, Christianity only further reinforced this.

Walking around holding the weapon is fine but limits the character's actions.
