What you don't understand about the whole physical/digital debate is that it's more about your rights less so the idea of having a piece of media in your hands.

If it was possible to assure people that when you buy a digital game, there is NO WAY it can be denied to you from that point onwards then people would probably just go all-digital. The problem is the game industry keeps getting caught out by gotcha after gotcha when it comes to digital games and they do little to nothing to try to allay those concerns when they come up. So people turn to physical media as some semblance of retaining the ability to use software after the terms set by the industry no longer apply.

There's no love for discs themselves. The conveniences of all-digital gaming are inarguable. Everyone who's cozied up to emulation or ODEs already knows the upsides. Portable consoles being all-digital is a far better solution than carrying games with you. There's no functional advantage of physical games, they just solve a problem the game industry keeps refusing to deal with because it's not favorable for them to let people continually access software - even after they paid for it - after they want to sunset a platform/storefront.

You don't get it, it's not about 64GB being enough, it's about the licensing costs to acquire that cartridge for mass production. Many devs wouldn't want to pay for a 64GB cartridge to dump their 8GB game in it without passing the cost to the costumer, so they will immediately jump to the Key Cards or just make the game a DL code.

If the ArcSys leak indeed is the truth about Nintendo only offering a single 64GB option for their cartridges that automatically explains all the third parties jumping only he Key Card wagon.

The price of a 64GB cartridge for publishers is apparently $16. The price of a Bluray disc is $2. Each platform holder takes a 30% cut on top of this. So minus distribution costs, for a $70 game it will cost companies $23 to release physically on Xbox or Playstation. It will cost them $37 to release physically on Switch 2. Nintendo pockets the majority of the publishers/devs profits in that scenario.

Hopefully this clears up why most devs are opting for the key carts instead, especially on multiplats where they potentially lose $14 for every Switch 2 physical copy sold if that consumer would have bought it in any other way. Also keep in mind that $16 becomes more impactful the cheaper a game is. A $30 game would mean that $25 of that sale goes directly to Nintendo.

Nintendo actually pays boatloads of money for their old Wii/WiiU/3DS era servers.
They're hosted by BroadOn, now owned by Acer. Basically during N64 development some of the devs designing the system spun off into their own company which handled the actual development of Nintendo hardware along with partner companies like IBM and ATI, as Nintendo themselves mostly does the software and controller designs.
Eventually Nintendo wanted to get involved with the internet and so this same company offered to host any online services Nintendo needed, including their own internal services including storing online literally everything Nintendo has ever made. This is where the gigaleaks came from.
When the Switch released they dropped BroadOn as a design partner for hardware in favor of working with Nvidia directly, and Nintendo online services were brought in-house as well. Nintendo has been trying to get rid off their remaining services at BroadOn ever since then as paying for what is essentially a private cloud company ain't cheap.
