The issue is that AI currently is very shallow in the degree it can function.
The biggest issue is the memory.
A text system can hold some amount of remembering past discussions, but they still struggle to keep that memory coherent. Image generation can be trained to better recreate a subject or style, but it lacks the nuanced understanding to do more than simple requests without breaking the subject. Video generation has been making big leaps but it still only puts out short single shot clips, partially because it's extremely costly to do longer shots and partially because the longer a shot goes on for the more likely the AI will lose track of what it's doing and start hallucinating crazy stuff.
This is a fundamental problem that they're still trying to overcome. They barely understand the actual processing of the LLM models and how the output is decided, so implementing some functional, complex and permanent memory to it is a huge hurdle.

Like a quick example is Darth Vader in Fortnite. If you didn't have AI to generate all the possible dialogue he has to respond to players with, how long would it take a team of writers to write it all? It would take 1000 years at least.
When AI can generate 3D character and monster models fully textured, rigged, and with a unique animation set for every one of them and it only takes like 5 minutes, do you really think it will still take a company like From Software and its competitor years to make games? They'll be done in weeks instead.
Even voice acting which doesn't take that long, in the future you'll just type out the dialogue(if AI doesn't do that too) and then generate a unique voice for the character and now all the dialogue will be ready to go instantly.
I just hope small/single devs will be able to utilize AI to get games with production value that's beyond their reach as for now

There are lots of indie games that would sell insanely well if they didn't look and play like indie games, just because of the good ideas in them. Outward for example is such a cool concept but lots of people just don't want jank like that.

I'm really not convinced considering the amount of assets and individual things that need to be made and placed in succession that has to be both consistent and coherent with the art style and motifs in general. Even if you are able to consistently make a lot of one type of thing, it doesn't seem like anyone is saving that much effort when you have to do editing like you mentioned and surely doesn't seem like it will replace someone that doesn't already do and understand what specifically is being generated.

Upscaling I think is where the future of this tech will shine because it will allow games to go back to being normal sizes again by taking a smaller texture and upscaling to higher resolutions.
There are hicups there too, but unlike fake frames, I will accept a DLSS artifact here and there if it lets me go from 1440medium to 4k ultra
