No game can have realistic close combat. Those who tried are awful.
melee combat always needs to be abstracted in some form to make good gameplay because it's just too copmplex to effectively simulate with conventional control schemes.
The only exception would be VR where you actually control the game with your body so realistic close combat is possible.
So having unrealistic combat with running and dashing around and simplified hitboxes over a simulation of impact force and wounds caused by the weapon is a good thing, not a bad thing.
Also massive great hammers are lots of fun but they just wouldn't work in a realistic combat system without uber strength.

Dark Souls is the best you can get when it comes to grounded combat in video game form.
It's not exactly grounded at all but it's fun and that's all that matters.
Shooters can get away with a bit more realism, especially if you add stuff like hand shake and recoil that reduce with better stats and the bullet slightly falling downward at long distances so you need to consider this too and maybe wind slightly affecting the bullet when aiming, but shooting a gun in a game is still miles away from shooting a gun irl where you actually feel the recoil in your bones.

DS1 is hard in the sense that it's a really slow and punishing game that requires tight timing and precise movement while having clunky controls, vague hitboxes and sloppy physics

It was way more grounded than 90% of action adventure games that came before it which usually had a jump, jump attacks and much spammier combat with attacks that dash you forward and autolock you onto the nearest enemy, cuhrazy ninja gaiden/dmc/bayonetta combos, etc. The only games I can remember with combat that didn't let you shit on the mobs by just mashing the attack button or pulling off insane combos is maybe monster hunter.
When people bring up DS1 combat they always compare it to what we have now, not what we had before it released as if that doesn't contribute to its initial success in the first place.
unfortunately they stopped making regular action games in favor of making stamina-bar roll-sloppa because every game needs a parry and every game needs a dodge

Are you implying you can't do that in Dark Souls? 90% of the mobs in these games either have no poise so you can walk up to them and mash R1 until they die or if they do have some poise their attacks are so slow you can make yourself a sandwich before you have to react.
People were shittier at video games than they were 14 years ago, if mashing buttons could carry people through dark souls in 1vx situations when it released then it would have never gotten a reputation as a hard game.
