The Switch 2 has different architecture from the original, and apparently Switch 1 games are being emulated to a degree to work on Switch 2. These upgrade packs work natively on Switch 2 to take advantage of its features.

No, they're patches. You buy a Switch 2 edition game and you get the game on a cart and download the patch.

I think what's going on is that when you buy a Switch 2 upgrade, it's downloading the entirety of the new port to your Switch 2 and leaving the game cartridge data alone, and only using the cart as proof you legally own a game. You can take the cartridge and put it back in a Switch 1 and have it revert back to the original edition. Can’t be possible if it’s just a simple patch.

Series X and PS5 both have backwards compatibility that just run the previous games in the better hardware, which gives mild increases based on that upgrade.
