I preordered the switch the day it got announced, but I'm probably never going to buy a game for 90€, even if I have to play inferior versions for the old switch.

Nintendo realized that they really don't need to sell their consoles at a loss/no profit anymore. Even if the sales drop, they would still recoup that from the larger profit margins. You have to remember that the game was just barely outperforming other games in the series when taking into account the sheer amount of platforms it was on at first. In other words, you had a situation where whales were buying multiple copies of the game because it was more lucrative for them to do so than to buy the shark cards.

I wouldn't risk using an adapter, you could get console banned for cheating. There's adapters for Xbox/PS that allow you to use KB/Mouse and still get console auto aim and those are blacklisted now and people that used them got console banned.

Switch 2 is weaker when portable. The Deck can play it with true HDR on an OLED at 40fps medium-high settings with a better battery life.

The keyboard is a much better control scheme that has a lot more keybinds. They want everyone on the same control schemes because that's more fair. Using KB/M is like bringing a hitbox to a fighting game tournament where everyone else is only using a controller. You will have a massive advantage due to the control scheme.
