The remaster is just the 2006 game running with UE5 to handle the graphics, most OG oblivion mods are directly compatibles and the nexus almost 600 mods available.

Skyblivion unironically seems more ambitious than Remastered because it's actually Oblivion completely remade in the Skyrim engine. Remastered is just running the original game with an UE5 skin made up out of stock assets and presumably AI generated shit

they're pretty different projects. skyblivion is an actual remake that'll adjust stuff like dungeons and mechanics, the remaster is more of a plastic surgery job on the original
Basically just vanilla Oblivion but prettier and kinda shitty performance and some very minor QoL improvements. I kinda wish they went a bit further honestly, they still left in a lot of stupid shit like leveled items and a lot of untouched bugs from the original. If you really liked Oblivion it might be worth a look, I haven't touched it in more than a decade so I'm enjoying it a fair amount.
