if you want some actual recommendations then you should check out botw/totk Kingdoms of Amalur (which has the same designer from oblivion and morrowind)

BoTW and ToTK both have a pretty lively modding scene, you should check that out.

The thing is, I want an infinite gameloop of exploration, crafting and freedom that gives you a nice sense of completeness. In Skyrim I remember some NPCs stopped me to celebrate and then a giant struck with all of us. These are stories and events that I have never experienced in other games
