Only thing current "AI" is actually good for in visuals department is to pump out moodboard refs and rough concepts for artists to refine. If you are strained with your asset budget, you can offload background elements to it, but it'll impact art direction. You can fine tune it to fit your needs better, but it won't be cheap and will still involve a lot of churn work.
More interestingly - if voice acting is absolutely not your focus, but you need some lines done - feeding it to whatever text to speech model can net you very passable results quickly. And judging by explosion of ai-generated music on youtube, you can get very solid bgms in no time too. You'd still need capable sound team (or single extremely overworked sound designer), but, overall, it could be considered a pretty solid crutch, ethics and legal concerns aside.
Codewise llms are surprisingly capable but i wouldn't rely on them in performance critical software like videogames. Shit is already bad as it is.

tl;dr - If you're running super lean and everyone is capable enough to mess with their pipelines - could be practical, but you'll have to address a whole sleuth of issues. If you've got resources - just do it normally, maybe permit usage on per individual basis.
Maybe after burning through couple more trillions of investments things will improve, but i wouldn't rely on it in short ot mid term.
