There's really no good choice, you either get hamstrung by weak raster on the 5060 ti or the 12gb of VRAM on the 5070 at around the same time. The 5070 ti is the only actual option for people that want a mid range card that might have a chance of lasting at 4k but it's expensive.

Ive heard amd's aren't so good for non-gaming which 3d/drawing/editing/rendering is a significant chunk of my use
AMD's big problem is that they halved the compute performance of their consumer stuff from GCN to RDNA in order to be more competitive for gaming. It sort of worked out for them with SoC sales in the end, but UDNA is going full circle back to GCN. They also have 128GB boards opening up to the general public later this year if you're interested in that for AI.
Honestly though, if you're mostly interested in Blender, consider Intel. Although there you're trading off gaming. Or dare I say it, Macintosh.

Arc Raiders. Looked like generic extraction slop at first but got into the beta and its one of the most fun multiplayer experiences I've had in like a half decade. Its ex-DICE devs that were making a Helldivers-like game but changed it into PvPvE. Its extremely polished already and actually feels inspired/original.

You seem to have a fundamental misunderstanding of what mid-range covers. A card that can still fully max out games from 2020 and earlier is a mid-range gaming CPU whether it still has support for new games or not. PC gaming goes back further than officially supported GPU cycle.
Someone with a 1080 would be able to play like 99% of PC games on default settings or better.
