I don't see why these types of games need remakes in the first place. Massive open-world games that were limited by the technology of their time makw sense. But Metal Gear Solid feels like it was already pretty grounded and well-suited to the hardware it was designed for.

They haven't elaborated on this at all though, and without changing the enemy layout or AI - which they won't do - all they can do is make your weapons less accurate or you die quicker, neither of which are particularly fun

Yes, but they haven't elaborated on that at all - if they're sticking to the original enemy placement, there's not really any way to make the AI more difficult, because if they significantly change the view cones, they'll then have to change elements of the level design which they said they aren't planning to do.
Therefore really the only thing they can tweak is nerfing player accuracy which just doesn't sound fun at all, but the alternative is it's piss easy.
I lost all interest the moment they said they're sticking to the original level design.

I'm going in with low expectations so that I won't be too disappointed, yeah!
