First things first: I've been a competitive PvP player in every single game that has offered it and have led several guilds/clan. In many games, especially those with semi-mandatory PvE elements, I've led raids, crafting efforts, general socio-logistics (alliances etc) and so on.

I am tellinh you this to emphasize the following: I've often come into contact with dedicated PvE players too. Occasionally, if they showed interest and had a great personality, I've tried to recruit and coach them. When asked why they've never got into PvP and everyone -- EVERY SINGLE ONE across all the dozens of games I've played -- told me the same: they are extremely averse to failure and competition against other humans. It borders on a social anxiety -- so much so, that most even seize up or phase and blank out when faced with a PvP encounter.
Coaching dedicated PvE players basically amounts to online therapy. The very first things you have to teach them are

people who play against them just play the game and don't have any hard feelings

NTA, if you played enough games, you'll eventually start to realize that PvE players are infinitely more "toxic" and prone to drama than PvP players. It's not just a difference in quantity,but also quality:
PvP players banter up and engage in healthy, competitive and lore-building drama against opponents (that often culminates im friendship) -- PvE players whinge about pixels and cannabalize each other, they engage in drama against another whilst participating in the same events, in the same comms ... creating faux, unhealthy (meta-)"competition". Thus, PvP guilds are infinitely more stable than PvE guilds.

They did make a hard mode in Black and White 2 I believe but they made it so you needed to beat the game on one copy and transfer the key to unlock it to another copy, which also resets your save and the key if you actually start it. On top of that the other game has easy mode, which is only unlockable after beating the regular game. On top of that even, they didn’t make stats change despite level changes so almost all of the difficulty changes are rendered moot outside of held items and a few moves that benefit from the level difference but you still get more exp from beating higher level enemies regardless. Gamefreak is retarded.

Everyone (except singles smogontards) knows singles is a children format and doubles format is the adult standard difficulty

That is entirely dependent on the game and playerbase.
Some PvE pits players against each other with their mechanics (i.e. sharing the same small pool of resources) so people get really shitty in those. Doubly so if it's difficult content. If the game is inherently casual, single or multiplayer, people will usually simmer down unless a speedrunner joins. Lots of small things like that build up game cultures.
Likewise I've seen PvP drama eat guilds alive and usually what happens is if the game is old enough and insecure enough bots will eat the PvP scene to the point that PvE is the only really playable game mode. OSRS is a perfect example of this since the wilderness is shitty for actual pvp, clans resort to doxxing each other and one of the oldest clans (RoT) would DDoS the servers so pvm and pvp players would die and they would loot their bodies up until death mechanics were revised to remove all incentives of doing that. They also removed the corrupt moderator enabling them to do that. Now instead they use bots to rapidly log in to all worlds to scout out the entire wilderness, report where a player is, what their stats are and what they are wearing and how much risk that measures up to be, and even what tile they are standing on so one person can get piled on by an entire clan of people if they happen to be in multi (or they can get shoved into multi if they are in singles). Total shitshow.
