Turn-based combat should have died in 2002 when Kingdom Hearts perfected the action RPG, making menuslop obsolete.

I actually thought the boss fights in rebirth were some of the more fun RPG boss encounters I've played in a while. It's everything else about that game that is the problem.
All those you listed are not like FF7-10. Those are like the FFs from the Nintendo era that I didn't grow up with.

I had to install the mod to make non-controlled characters more aggressive for FF7remake. Even the AI for Goofy and Donald were a million times more useful in the first Kingdom Hearts.

It’s really dick. There are so many 3rd party software indie developers that it would be a crime if square or whoever the fuck ever makes the FF games made some turn based games. Plus they try and keep FF really character driven and story based rather than about the stat spreads, which is why they make other RPGS

I kind of don't care at this point. I think I'm probably done with FF after FF7 part 3. I'm finally at the point where I'm willing to admit that FF hasn't been great in over 20 years, but I'm invested enough in the FF7 thing that I'm committed to seeing it through to the end.

Persona, Dragon Quest, ect have been here and have been keeping Turn based games alive. All of this just simply boils down to people wanting Final Fantasy being turn based again.

the FF7 Remakes have a really good combat system. They are essentially modern interpretations of the classic ATB system. Instead of automatic turns you have to switch characters manually constantly because otherwise the enemies start hyperfocusing you, and almost everything outside of the basic stuff like regular attack and block are found in the command menu. Hitting up the command menu also puts the game in slowmo and you can even issue commands on other characters through command menu switching instead of full character switching also makes setting up combo attacks really easy and fast. Enemies also have quirks, weaknesses, resistances, etc. So analyzing is important just like in the old ATB games.
The Remake didnt even have full damage mitigation, dodge was really just for closing in distance or evading special attacks and block would just reduce incoming damage. Rebirth added perfect block/perfect dodge which basically function like a high risk/high reward mechanic similiar to Exp 33 (but not nearly as vital)
The only issue is that.... they are too easy, unfortunately this applies to any modern RPG. making a cool combat system with a lot of depth just gets lost on most players because of the lack of challenge. You can mash your way most of the game and while it will be suboptimal, you will still advance just fine.
I'm less favorable on 16 which has great gamefeel but the enemies just feel like different shaped giant HP bags, almost never challenging the player to fight differently. It feels like a wannabe character action game thats also way too easy, like probably the easiest "RPG" I ever played. theres a lot of flexibility with mix/matching eikon abilities but you basically only need to do it for the sake of doing it, the game never meaningfully challenges you or tries to exploit a poor build
