If he hadn't Nintendo would never have done it, and if they HAD done it somehow anyways, they'd absolutely fuck it up. Sakurai helming it ensures it'll at least get some budget with the internal clout he can throw around, Ninty loves giving as small a budget as they can manage.

Now that you mention it, i think some songs like Grand Doomer's theme or the Arena theme from RTDL and Morpho's normal theme from Star Allies have a good chance to show up, given those 3 were all from the cancelled GCN game before Sakurai left.

As for sound style he might opt for? i feel like maybe Ultimate's music remixes for other stuff might be a good clue-in to that.

BIG "it depends". Sakurai is still a softie at heart so I could see him acknowledging that fans loved seeing characters like Adeleine/Daroach/etc playable in Star Allies and Star Riders is the perfect place to allow for multiple racers instead of just colored Kirbs, Metaknight and King D.
But then again like (You) say, his OG series autism and seeing the series as his baby could very well hamstring the whole damn thing
Maybe instead of just "Vs. Dedede" we'll get a variety of "Vs." stages against major bosses throughout the series

The selection reads like someone who had no idea what songs actually matter and just went “uhhh these songs all contribute to the game’s main leitmotifs, throw them in”, and of course no remixes at all, and stuff like the CROWNED from Dedede’s Drum Dash Deluxe taking up a slot instead of the remix from Rainbow Curse or other notable Kirby music, etc

The main racing mode was the least interesting part of Kirby Air Ride, hopefully Sakurai recognizes this and focuses on City Trial. But he is autistic about not repeating ideas.

Sakurai doesn't pick what gets remixed, the composers get to pick what songs they want to remix. This is why Castlevania and Megaman both have a million remixes, most of Smash's composers are big CV and MM fans.
