Osaka team the main people behind KH got asked to help get XIV out the door which was the first bump in the production timeline. Nomura's then been busy with a bunch of FF7 stuff and likely Osaka team also had to help there in parts to insure the games got out on time. Missing Link was supposed to be the hold over game that was to keep people busy while KH4 comes out in late 2020's but instead that got canned and now they need to prove they actually have been working on it.. Slowly.

the main reason Versus was canceled is because XIII had development issues and wasn't as well received as they hoped. swiftly followed by XIV being the worst mainline game ever released.
both times they took developers away from Versus to try and fix their messes.
eventually they wanted to make it XV to make more money off of it, which meant that Nomura's original ideas that were green lit no longer seemed appropriate to be in the game.
what happened here is unknown to the public but i'd guess Nomura didn't want to let go of his vision so they forced him off the project entirely to get it done.

squeenix's output has been so mediocre for such a long time, I dunno how much I can expect from this game

And Sora spent a year stuck in the Final World where there is No Time. Sora as explained in the trailer of KH4 has only spent a week so far in Quadratrum. Sora is still 15. Things are so bad that in the intro of Kingdom Hearts 3 Sora needed Donald to explain to him that it has NOT been too long since the ending of KH2 with Sora visiting Twilight Town.

I'm telling you Sora is still 15 because Nomura invents every reason to prevent time from affecting Sora's body from aging.

Dude for Persona each game is different. Kingdom Hearts is the opposite where the whole series is the same continuous story with the same main protagonists.

Even things like Metal Gear needed to change protagonists to explain the full timeline of the story. Kingdom Hearts on the other hand wants to stay with the status quo of Sora as main lead but the story drags on and on for years inside universe and in real life for us waiting around for a new game where Sora is still a kid.

Because for a series like this the idea of an adult manchild Sora is embarrassing. For a series like this one its better for the protagonist to be a kid. And its canon as explained in Union Cross that the worlds always reset themselves once they complete their stories so Aladdin will always go back to fighting Jafar, Alice will always end up in Wonderland, Simba will always see his father die and return to Pride Rock eventually, etc. The same principle applies to Sora and the original characters.

Him fighting Vader wouldn't be epic it would be too forced and out of place. That said, a general story exploring Endor doesn't sound bad at all.
