EoSD is on the harder side of the spectrum of touhou games, but if you can beat it you should be able to have a comfortable ride throughout the rest of the series. The PC-98 games play quite a bit differently from the windows eras touhous, so I'd still say it's better to start with since that is what most Touhou games are going to be like.
EoSD can occasionally have some compatibility issues when running on a newer OS, so be wary of having to troubleshoot some stuff.
