DFU fixed a lot of issues with the way the dungeon blocks worked so the labyrinthine dungeons are completely navigable. Dungeons aren't even that big without smaller dungeons.

I want to play Daggerfall, but every time I tried, the game felt way too sluggish with its pacing. Is there a way to make it either snappier, or add more content? I wish it would feel closer to Morrowind.

It's paced well enough to enjoy casually. Can't say the same about Daggerfall.

Difference is those have fun, intricate and difficult to manage systems backing them up whereas Daggerfall has awful gameplay.
I mean it’s a very early RPG and definitely has a lot of that dungeon crawler DNA in it.
I like Daggerfall because it feels like if you crossed an immersive-sim such as Thief with Wizardry.

There are none. You want a different game.
They were shitty back in the day, too. The dungeons seemed even worse to me back then because I was playing shit like Might and Magic 4 and 5/Lands of Lore/etc which had much better dungeons. I remember actually starting over one time because I was hopelessly lost in a dungeon and forgot to cast recall. The vastness of the world was far more impressive when daggerfall was new, though.
