It's more likely that a live service game would be the type of game to be removed from your library/ban you from using it and those are far more widely available on steam than they are on gog so it's not something gog has to worry about too much. If Chaim Shekelbergstein wanted to steal your digital game on a whim they can because it doesn't belong to you.

Of course you can do that, it's DRM free. But GOG can stop SERVING that material to you at any time ie. the games tied to your account, if they shut down or ban you then you can't redownload them anymore.
Legally, if you're banned they also withdraw your license and permission to use that material, but it isn't like they'll bust down your door to seize your backups.

The games I bought on Steam many years ago can still be redownloaded and played as many times as I want without issues and nobody took them from me. And I can easily move my account between devices.
