A few more points:
The skill system is a huge mess. There's genuinely TOO many and 90% are basically "do 1% more damage"
The actual fun skills that you use in combat aren't unlocked this way. You have to find them in the world and even then it's a RNG of what you'll find.
I found 10 and six of them were bow skills when I was a melee character.
The combat is pretty dumb. They obviously tried to make it harder by making the enemies deal more damage and restricting your heals

Short answer is it depends. Do you like open world "box checking/collection/objective" games like AC? If not, then probably this isn't for you. If you liked earlier AC titles, the "modern" ones have more focus on different gear progression and a more active battle system akin to soulslikes rather than the "parry and kill each guy one by one" thing that became a bit too normal in the old days.

You'll miss a bit and have some stuff spoiled for you given the 'real world story' (think Desmond back in the older AC days, startin with Valhalla. It goes

Each of these three AND THEIR EXPANSIONS have some important shit going on both in the mainline story and show a different historical part. I'd suggest playing them in order.
Mechanics
Origins, Odyssey, Valhalla also have different mechanics to gameplay - Each one's set of equipment drops, talent/ability unlocks, and whatnot is different. I suggest playing in order again. I personally think Valhalla had the best mechanics and Odyssey the worst (the looter shooter level of gear drop, the abilities/skill system that is very narrow and requires respecs ), but others have their own approaches. I enjoyed playing them all.
Setting
It really depends on what you enjoy the most. There' variation in all of them, but its very different times and places. Also keep in mind that the expansions of all games tend to branch way beyond what's in the main setting and tend to be split into "historical" and "mythological" focuses with the latter being WAY wilder.
Content
There's a lot of it in all games if you're like me and 100%-the-important-stuff. Valhalla has MASSIVE amounts of optional content though, but its set up more than the others for stuff like the whole River Raids campaigns or the Tombs (old school AC puzzles) or Mastery Challenges ( serious challenges that will overwrite your difficulty level); but OPTIONAL.
Mirage is unique in its own right, sort of a half-step between the old ACs and the modern ones. It was a literal Valhalla DLC expansion before it became its own standalone. Its quite a nice little "pallet cleanser" after Valhalla having so much content, as Mirage is relatively small by comparison, city focused , and takes you to Baghdad during the Islamic Golden Age etc.
Note that Mirage should be played AFTER VALHALLA. to get the most out of it. It basically spoils part of a big reveal in the main Valhalla campaign, but once you've played it it provides more context for how that character became how they were.

This is NOT an AC game. This is a Viking god simulator. Ignore the modern plot bullshit and you'll have fun. You are Odin reincarnated as a mortal man and you're here to conquer England.
Personally I find the combat to be a bit ass on higher difficulties. There's no reason to play anything other than story mode. The game will dump you with 20 enemies that are health sponges and it's more fun to play as a Norse God who can smite the shit out of everyone than to pretend eivor is a regular human. It's not a matter of git gud, it's just boring to play on hard. I exclusively used the claymore and I Felt like it was the best Berserk simulator.
As for voices, the French dub is superior. English VAs make men sound like bitches and bitches sound like men. French dub makes eivor sound cool and all the women sound sexy.
The Odin DLC is also fantastic, as being able to turn into a raven and fly around made playing open world's fun again.
I like this game solely because it tried to avoid being assassins creed. There's nothing AC about it. To me this is the best game Ubisoft has put out in a long time. It's ashame odyssey grabs all the attention, that shi was awful, I fucking hated Alexios and Alexandra.
There's no reason to min max. Just let the game auto level you and it'll be fine.
Also I just played on story mode, it's far more fun. "Hard" in this game means enemies one shot you while they take 50 sword hits to die.

Origins is the best because the RPG system barely matters and is easy to ignore because all you need to do is half-assedly upgrade stuff and equip the highest tier equips every time.
Mirage is just a classic AC game with Valhalla physics and one really broken super move you can simply ignore using.
Valhalla starts out fine but the longer you play the more insanely padded it is and if you are a 100%er it's insanely padded to a ridiculous degree to the point that River Raids are literally a 60 hour minimum grind, more realistically 100 hours just to buy everything related to it.
Odyssey isn't an Assassin's Creed game, it's a generic Greek RPG. If you just want to run around it's fine, but it's the second most bloated game in the series and the Diablo Loot absolutely ruins the game if you are an AC fan. If you go into it expecting a generic RPG it's mostly fine from that viewpoint.

Odyssey didn't have it. Being able to instakill was an advertising point for Valhalla due to how many people complained about it in Origins and especially Odyssey (Since it was massively worse in Odyssey). It's why them adding the notice that the game wasn't balanced around it when you go to turn it on makes no sense because that notice was added later as far as I recall and the entire EXP system is balanced around it being turned on.
Odyssey's "solution" of a workaround is dropping to the lowest difficulty because it lets you circumvent the defense mechanics or something to a much higher degree so you can kill gold-named enemies two levels higher than you without an Assassin build. Obviously that means you are invincible and kill everything in nanoseconds outside of stabbing them so it's functionally pointless but it technically exists to a degree.
I liked Valhalla but the intro was hard to push through with random black vikings in your crew.

But the best part is of course the raiding and they stop adding anything to those after like 10 hours in and the story never goes anywhere so I'd say it's only fun for 20ish hours, maybe more if you really like the story or bog standard ubishit/asscreed combat. But the Mercenaries suck ass because they don't stop spawning with psychic powers causing your bounty to very quickly spiral out of control early in the game, and later on they're just super annoying because they spawn when you do anything and waste your time.
Ship battling is the worst in Odyssey with the only thing beating it out in awfulness is the Experto Crede in Freedom Cry thanks to the level scaling and just how tanky everything is. You can have the best commanders and the ship maxed out and still take an eternity to kill everything while you die in seconds with some of the weakest feeling attacks you ever felt.
for a lot of people odyssey was the breaking point for rpg creeds like syndicate was for the paired animation combat creeds. the only reason for you to play valhalla is if you enjoyed origins and odyssey or like the setting. if you dont enjoy the setting or dont enjoy the series then there is not much for you to discover. for history fans odyssey is better. valhalla's discovery tour is extremely dogshit in comparison to odysssey's.

it seems much of the dev time was lost on the technical aspects of the engine facelift and the seasons feature. i went back and played odyssey with the gamepass i had left and the 2 games are night and day in the amount of fleshing out the worlds got.
you can ignore the cultists and just do the family story and finish the game in 15ish hours while dabbling in a few side quests that you are forced to do to get levels. there's also some community created maps where you can just grind exp and that should take 10-20mins if you want to ignore the side quests alltogether, which i think you need to do maybe 10-15 of to stay on the xp curve. i agree its pretty gey.
1st DLC is decent since it focuses on the cool part (setting) and has you dealing with the persians and the 2nd DLC is like a purgatory in my case and i called it quits around 1/3 through. its especially bad because the dlc is like entirely focused on the isu/current day stuff which got abandoned altogether in the later entries

The start of Odyssey's story (So, the interim between William recruiting Layla) was done in a comic, yes. Every character there but Layla was either introduced in an interim comic, was introduced in prior lore drops (The Abstergo chick), or was introduced in older content (The Japanese guy they mention).
The middle of Odyssey's story is Layla physically going to Atlantis and setting up shop there.
The end and DLC of Odyssey's story is Layla literally being handed the Staff of Eden by Kassandra and watching her promptly die before proceeding to go through Kassandra's memories of what Aletheia taught her on how to wield the staff as she went insane because she has no Isu DNA in her leading to her killing her handler, all of Sigma team, and paralyzing Otso.
Valhalla's entire story revolves around Odin and a bunch of other Isu trying to overtake their human hosts because their way of surviving the solar flare was to copy Aita but in one single person instead of across all of human DNA. Loki realizes Eivor hosts Havi and tries to kill her. The game straight up ends with Loki being resurrected by Layla dying and him dropping on the Staff of Eden that has his wife's consciousness in it.
Valhalla's entire drug binge segments are Havi's memories mixing with Eivor's and involving tons of Isu members to the point that we literally see Minerva (Picture related) leaving messages via her Isu computer for Desmond and other people, Juno, Aletheia, and more. The entire drug binge stuff is literally just an abstract version of what happened.
Even the Dawn of Ragnarok DLC is about how the end of the Isu came about and how the solar flare was finally approaching.

Syndicate feels bad for a million other reasons
Syndicate lets you instantly kill anyone with your Hidden Blade or throwing knives and fighting is never necessary which isn't possible in Origins or Odyssey. I went straight to Big Bong (Level 10 enemies) at level 2 and started exploring. Same deal with Valhalla, as soon as I reached Angle Land I pretty much beelined to the bottom-left of the map stabbing my way through it.
Syndicate also let you become very overpowered with the Rooks very quickly and even if you just expand them a very tiny bit you can call them in on enemy groups you have no business fighting at you level and watch them slaughter them. When I was on my way down there there was some level 4 or 6 sweatshop I had to clear without being seen and only just started buffing the Rooks. They cleared the entire sweatshop as I stood on the scaffolding watching through the walls thinking they're gonna die any second and I'll figure out what to do, I was beyond baffled. Needless to say they were never used for the rest of the game.
Black Flag > Revelations > Mirage
AC1 is outside the list. It doesn't even feel like an AC game. Very much recommend it though.

Not gonna lie I wanted to like Syndicate but holy FUCKING SHIT, it's like I'm in control of my character 50% of the time. Every action is way too contextual, my character uses a tool when I want to avoid being shot, he tool executes an enemy when I want to use a smoke bomb, he refuses to jump off ledges, he goes back to the driver seat when I want off my ride, a bunch of other shit that drove me crazy. London is beautiful, the target assassination missions were well done, but holy shit the controls needed like 5 more separate keys.
Did you play Unity? It's a lot smoother than that, it's more or less built off of Unity's systems. Not to say it's that smooth to begin with. I dunno, I liked Syndicate. Getting massive combos was fun. The zipline made traversal easy.

coming from odyssey and valhalla they scrapped a shitton. mercenaries, naval combat, big battles to name a few. they kept the shitty dungeon crawling which im not sure anyone liked. the replacement for side activities being all collectathons sucked. crowd NPCs are utterly pathetic even compared to odyssey. they removed meditation and also the "follow road" feature which is just bizarre.
4. Story
they basically made 2 stories. one that loosely follows the unification period of japan and a very half assed templar revenge story for yasuke and assassin origin story for naoe and instead of focusing on one they leave both unfinished and have you wait for DLC to see the conclusions to all the story beats.

I noticed a decline in how deliberate and consistent the control scheme is throughout the series. The first big downgrade came with AC3 where they automated a bunch of parkour contextual actions but retained the need to hold down both space and rmb for high profile and sprint, the second with Black Flag, where they introduced needing only left shift for sprinting.and Edward / Adewale / Shay kept jumping on all sorts of places I never meant to, especially on ships. Syndicate is even worse than that, but in all areas and not just parkour.
The controls for the first 4 games (1 and the Ezio trilogy) haven't been topped so far. Everything the character did was consistently in line with what I wanted him to do.
Well, it wasn't just about telling her what Kass/Alexios went through, but her experience as a sort of training simulation in order to learn to make use of / bond with the Staff of Hermes Trismegistus. Note that Alethea did the same thing with the Eagle Bearer, as the part you play through is sort of a quasi-recording of what Alethea went through particularly when she was the Dikastes of Atlantis; the other parts with Elesium and Hades were also other Isu elements (ie you meet Isu Hermes and Hekate I think, in one of the few choices where you can decide which you want to back etc) juxtaposed with the Greek afterlife. So even the "demigod" Eagle Bearer needed to be VR-trained to use this particularly powerful Isu staff as well as revealing parts of Isu history and the like. Its worth mentioning that the Spear of Leonidas "full version" forge molds are seeen in Atlantis and certain abilities you get there can activate generating the full thing, not just the spear tip.
So Layla needed all that experience and she was much less powerful and genetically attuned to Isu stuff vs Kass/Alex. However, its worth mentioning because of something that's a big fucking spoiler later on with Valhalla, you have to wonder if she COULDNT or if she was purposefully NOT TOLD/NOT PROPERLY BOUND to the Staff even after all this stuff Its obvious Alethea orchestrated the whole 3 games long Heir of Memories bit with Layla + Kass/Alex's holding of it in order to get Basim/Loki back..at least in part. We see that Kass/Alex does not need to physically walk around all day with the giant goddamn staff on them to be immortal, yet the moment Layla drops it - stupidly, she should have known what Yggdrasil was gonna do - she dies because she';s not in touch with it? .[/spoiler
AC4's engine is pretty bad about sticky jump points for sure. It's a big problem in Rogue as well. Unity feels even clunkier than Syndicate but it has a lot of detail put into the animations. Climbing feels really good in it at least.
One thing that bothers me is that (apparently) they always made Yasuke feel superfluous. Putting aside the George Floyd shit or why Yasuke should be a playable vs a side character in the first place, he can't make it to the top of every viewport etc. WHY! It feels like he entire game is made for Naoe (which it sort of is) but Yasuke is there only to unga bunga combat and nothing else, yet they give you supposed equal choice between the two. They left the story for Naoe off at the point where she's going to discover the assassins and what their relation to the mcguffin box is. Yasuke's story was concluded in the main game but not Naoe's/the assassin branch's.

They never put a single effort into Yasuke and you can tell his character was probably written into the story half way through because it's so disconnected from the whole Assassin part of the story. He's also not a real character that you for a second believe is meant to be a foreigner and instead he basically is just a japanese character in a story based off a western character. The foreigner aspect is not baked in like in other media depictions like the recent shogun adaptation where they make a huge effort to show how much a fish out of water William Adams' character in that show is initially.
bro jsut skip unity. The gameplay is ass besides the parkour vids show. The map is suprisingly boring despite all the praise it gets. Its one of the weakest AC stories just a bad game

When it comes to Layla's whole deal with the Staff you have to remember she's been going insane holding it because she has no Isu blood compared to Kass who is basically a step away from being a pure Isu. It's very likely it was just her not having proper control over it at all and at the start of Valhalla she started telling Shaun and Rebecca about how it's messing with her.
Regarding your Odyssey talk, Kass' specific lesson wasn't to wield the Staff itself, it was lessons to allow her to live for 2000 years holding it until she could pass it onto Layla because she was going to deal with seeing wars, death, loss, and more on top of being tasked to follow up on the Pieces of Eden scattered about to bring balance to the Force so neither side could get them. She was supposed to make decisions that could shape humanity due to her immortality and if she tipped the scales too much or pandered to a side too much she could end up destroying the world before Desmond or Layla ever existed.
Keep in mind that the Adonis stuff was supposed to be a lesson on how to settle disputes and make peace, the Hades stuff was supposed to be a lesson on loss and war, and the Poseidon stuff was supposed to be a lesson on the constant things happening in societies, how to address them, and how to deal with internal disputes in sides she does join.

Except in Unity you can stab anything or shoot it in the head which you can't do in those titles. Valhalla lets you turn on instant assassinations but you can't insta-kill with headshots.

Let me tell you how I much hate ubisoft for completely sabotaging the original AC3 in favor of the ugly as fuck demaster. It won't even launch anymore. You have to manually remove a certain file in the install folder to be able to launch it, and then you'll notice that uplay refused to download any dlc content you own, leaving you with the most barebones version of the game. It's cancer to fix and at this point it's easier to pirate the skidrow repack than trying to install your legal copy.

Because people had spent the last eight or so years at that point complaining about the combat being too easy and chain kills making combat a bore. This led to them doing a full overhaul of the systems which is why you now have a new parkour system, they redid how Eagle Vision could work, and they redid how a bunch of general stuff in the world functioned, particularly social stealth.
