The most adrenaline you can get from a game is competitive shooters in clutch situations. Siege, Valorant, The finals, Apex(before it turned shit) alone in a 1v2 3 up to 5 situation you will feel like you transcended reality if you pull it off. Now I'm not recommending any of these games because they're not for pve shitters so for you? Probably just do no hit runs of shit like DMC on dante must die mode or Nier automata on the hardest difficulty. Nioh 2 is a good option as well

Tide games. Vermintide, Darktide. Fits exactly what you describe on higher difficulties. But they are an acquired taste.
