The issue is that AI currently is very shallow in the degree it can function.
The biggest issue is the memory.
A text system can hold some amount of remembering past discussions, but they still struggle to keep that memory coherent. Image generation can be trained to better recreate a subject or style, but it lacks the nuanced understanding to do more than simple requests without breaking the subject. Video generation has been making big leaps but it still only puts out short single shot clips, partially because it's extremely costly to do longer shots and partially because the longer a shot goes on for the more likely the AI will lose track of what it's doing and start hallucinating crazy stuff.
This is a fundamental problem that they're still trying to overcome. They barely understand the actual processing of the LLM models and how the output is decided, so implementing some functional, complex and permanent memory to it is a huge hurdle.

Like a quick example is Darth Vader in Fortnite. If you didn't have AI to generate all the possible dialogue he has to respond to players with, how long would it take a team of writers to write it all? It would take 1000 years at least.
When AI can generate 3D character and monster models fully textured, rigged, and with a unique animation set for every one of them and it only takes like 5 minutes, do you really think it will still take a company like From Software and its competitor years to make games? They'll be done in weeks instead.
Even voice acting which doesn't take that long, in the future you'll just type out the dialogue(if AI doesn't do that too) and then generate a unique voice for the character and now all the dialogue will be ready to go instantly.
I just hope small/single devs will be able to utilize AI to get games with production value that's beyond their reach as for now

I'm really not convinced considering the amount of assets and individual things that need to be made and placed in succession that has to be both consistent and coherent with the art style and motifs in general. I'm a 3D artist, but I've never worked in this kind of low-poly style. I'm not really sure where I'd start outside of looking at the models for Tron, Roll and Megaman to understand the basic shape structure. I wouldn't really know the tricks to transfer the style to other characters though.
That's what this AI is clearly doing, it's able to figure out a good blend of the styles, though the result isn't a real model, just an image. But with that image, I could theoretically recreate the model structure and make a real model based on the AI outline. Then I'd have a real model to use for more things than the AI could generate.

I said right there that I'd probably start by looking at the Megaman Legends characters I'd be looking to emulate and how they did their topology and texturing because I prefer to learn through examining a finished piece and figuring out the tricks to the creation from there. Others can use step by step videos to get the idea.
But the point is that just gives you the development pipeline. It doesn't really teach you anything about the transfer process getting a character from one style to this new style. The AI can give a much better starting point with things like . If I wanted to make Oboro in the low-poly style, there's multiple examples in there of how it could look, particularly around the hair, shoulderpads, the way the cleavage is shown, etc. Shapes that are clear enough to get a basic idea of how I could make one myself within an actual 3D program using that pipeline described above. Obviously some aspects are wrong (like it gave her Tronne style hair wings) but those are smaller details I can work around.
The point is that it saves time in concepting and figuring out how to bridge the gap. AI works as a tool to visualize, and from there a real artist can take the visualization and make it something more tangible.
