they were developed in parallel and exchanged lots of ideas between each others. sekiro is made of bunch of rejected combat ideas for elden ring (visible posture bar), and elden ring has buncha elements that were scrapped from sekiro (malenia = tomoe).

Also Rise of Ronin solved the parry system by making timing rely on weapon and combat style you use and allowing you to dodge and block to learn enemy attacks.

Sekiro is just not as good as Souls. Having ONE weapon with a Dark Souls tier moveset is boring. The exploration is nonexistent. The game has one way to play.
It is still fun, I liked it, but nah. I am glad they made Elden Ring.

You can perfect guard for higher stability and 100% physical reduction, but that's tacked on in the blocking system with none of the mechanics Sekiro had

So I do have an actual theory in regards to this.
1. It's a very different system from the other games made by the company in terms of being parry only, and I feel like they had reached the logical conclusion of a parry only game in terms of game design.
2. The DLCs for Elden Ring and DS3 (though this might be true for some of the other games) largely stemmed from stuff they wanted to include in the base game and didn't have the time/manpower to include. For instance I know they wanted more Miquella stuff in base ER but instead put a pin in it and made the whole SoTE around it. I think they may have simply not had anything else to add storywise to Sekiro. Unless you want a Journey To The West style DLC where you take the dragon home (which honestly both sounds awesome and also a full sequel sized amount of content), the story is resolved

in DS and ER when you do damage you also fill an invisible bar, fill it all up and the boss will stagger so you can get close and do a big hit.
Sekiro you see you're filling this bar with parries and attacks and when it's full you can instakill/deplete the current healthbar of the enemy.
The main difference between the two is that with sekiro enemy posture keeps regenerating based on their health while in ER/DS it resets after a delay.

And parrying in sekiro doesn't give you 100% damage resistance and stability???

A videogame should at least try to sell the illusion, otherwise that's how you end up with the kind of reddit tier self aware shit you see popping up everywhere now.

No, it's just stance damage. Dark Souls 3 had it. It even retains Dark Souls 3 brand new animations to showcase when enemies keep changing their animation for hits as they get close to stagger. It doesn't interact with HPs in any way

Elden Ring took absolutely nothing from Sekiro. Dark Souls 3 introduced stance to replace Bloodborne's dps based stagger system called "limb break", even though certain enemies in the base game still use limb break
Sekiro retained B teams's limb break system where the actual stun is done by DPSing bosses until they play an hitstun animation, a much less refined system that rewards spamming R1 chains
