I think the real reason RealRenoir wants to destroy it so bad (instead of just locking it up and burying it or something) is because he's terrified at what the Lumina Converter could mean - if their painted creations are strong enough to overpower the painters with just a few months of using it, what if they keep using it for years? Could they even become powerful enough to leave the canvas?

Given the state of things it's likely the fire was started using an accelerant which could have gotten in her eye, resulting in her eyeball literally being on fire - at that point it's best to remove it. Would have also likely caused damage to the socket which would make a glass eye not usable - from what we see of it there's more than just her eyeball missing so there was likely a lot of flesh that had to be removed from the damage.

I've seen the idea thrown around that the best way for the ending to have gone would have been for Maelle to leave after reviving the dead, and for Verso to have not destroyed the canvas. That way everyone could have lived happily ever after. While I agree that ending would have been a bit more satisfying while keeping in within the game's themes, they do make it somewhat clear that it isn't an option.
Somehow, Alina will always find the canvas. Both Renoir and Clea state that it can't be hidden from her for long. It seems like she can just tell roughly where it is through some magic connection. Renoir is even proven correct about this mid-fight when Aline shows back up to help you defeat him. So from Renoir's perspective, he HAS TO destroy the canvas or his family will fall to ruin even if he doesn't want to.
Given that, though, it does make me wonder how Maelle's ending even works considering eventually Renoir would try again to stop her or Aline would come back to the painting because of her addiction. Her ending is still the more morally justifiable one, though.
