I gave up when I couldn't figure out why my character would randomly have a black face after 5 minutes of playing despite not starting with one.

I still enjoy Skyrim's basic "fantasy world simulation" (so I don't uninstall my modlist when I get bored of it), and I enjoy fantasy-themed erotic content. It's like "emergent gameplay" but with porn.
It's easy to install sex mods on top of it because most of the dependencies are stuff already used by other gameplay/immersion/etc. mods (and it's also easy to disable them when I don't feel like getting surprise blowjobs from Lydia every morning).

They're starting to, but it's not so bad since Skyrim is effectively "complete" and all the major mods people can think of are pretty much complete as well. Pandora's still in the works, but it's building off a decade of work in animation engines already, so it doesn't take much.

It's "easy" to remaster Oblivion because people don't hate the game's combat gameplay and level scaling as much as they hate everything about Morrowind's gameplay mechanics, and the time/money wasted in an attempt to remake the entirely of Morrowind (both world, gameplay, full voice-acting, etc.) would be better spent on TES6 (or Fallout 5, season 2 is coming and FO4/76 enjoyers really don't want yet another "next-gen" update).

The Oblivion remaster was exactly that; a remaster. The game is exactly the same under the hood, it just has UE5 slapped on top of it. This would not be possible with Morrowind given how old it is, so they'd have to completely remake it, and that wouldn't be anywhere near as profitable as re-releasing the same game with a new coat of paint was.
