Which one should I start with?

Symphonia, Abyss and Vesperia are often seen as the golden trio. Zestiria almost killed the franchise. Berseria is its prequel but a far better game.

Vesperia is fantastic, Zestiria is fucking terrible and Berseria is okay.

Unless the remaster is announced this year, emulating PS2 Abyss is pretty much the only way to play it yeah (3DS port is the same game but blurrier textures and a worse emulator so, you know). As for Symphonia, the original Gamecube version is the only one to have 60FPS. All following ports including the PC one lack that but add other things like sidequests, Mystic Artes (think Limit Breaks from FF), optional costumes, etc. so the Steam version is probably still the best one to play nowadays even if it's not perfect. Vesperia's modern ports are all good.

If you are old Tales fans, just think it's as a new IP named "Arise" without "Tales of" in front of it.

If you care about FPS, play Symphonia on Gamecube, otherwise there is the PC port. Play undubbed Abyss (PS2) for voiced skits. Vesperia is not on PS2, but there is a definitive edition for PC.

For me, it's because FF has sucked for the better part of 25 years and even the worst Tales ie Legendia, DotNW, Zestiria resemble their brethren more than any modern FF resembles the peak of that franchise in the 90s. Dragon Quest has incredibly generic worlds and characters like if every single Tales ever made was Phantasia, and every Persona is like 200 hours long and once you've seen the novelty of one highschool setting you've seen them all

I think it has to do with limitations. The first few jumps from 2D to 3D were experimental, but even Graces looked really good on the Wii. Since they've been following the designs more closely, it's ironically less stylized.

Totally agree. Vesperia nailed that perfect blend of anime and cel-shaded style, it actually looked like the skit art brought to life. The Xillia engine always felt kind of plasticky in comparison—even in Arise, the character models look like they’re made out of those high-end anime figures. Not bad per se, but Vesperia had style and consistency. Shame they never built on that foundation.

Arise is a fantastic game for the first 3 chapters. Everything afterwards feels incredibly rushed and put together all slapdash. It also helps that like 60% of the game's content is in the first 3 chapters. As soon as you get Dohalim you're effectively 1/2 of the way done with the game.

They're already skirting with the idea of vast open areas (and probably aiming for open world) with Zesty, so I assume they decided to expand on that instead of evolving the art style.
Zesty kinda failed, and Berseria was probably was made as a response to it which they just pretty much do the same style as Zesty cause they belong in the same setting

I'd argue it wasn't even earnest edgy like Xillia 2 or Berseria were. The latter has a kid "artistically" dying on screen and the former has more than one child corpse in a pool of blood in a couple levels.

Berseria was way more "edgy". I had a lot of fun with Arise, but one of the worst things about it was how quickly the characters forgave the villains. This soured the ending for me, with the main character trying to give the antagonist another chance.

The remaster is a straightforward one, nothing super glaringly wrong, although characters (mainly Sophie) lose the licensed costumes. Looks fine, runs fine etc etc

It doesn't have any particular brand new content besides some slightly more streamlined features But you can use the grade shop now without beating the game first, they just give you set points if you want to use them. you still have to play the game and fight a certain number of battles to unlock the harder modes though (or if you play on PC you can just cheat engine it in I suppose)
