This is just speculation but it's the best explanation I can come up with. Kris doesn't have trouble expressing themself in other ways, hell we know they're going to be playing the guitar next chapter. The piano must just be special to them in some way.

Determination can revive them, but then you end up with Amalgamates, at least in Undertale.
Deltarune should function a little differently because, at least assuming Queen is correct, all Lightners have Determination, unlike Undertale where you only have the one known edge case of Undyne.
