Every time i return to EU4 I always gravitate towards Castile as one of my first playthroughs because you have the nice flow of stabilizing internally, then conquering or vassalizing the rest of the peninsula, and by the time you get situated with all that you will naturally proceed towards colonization and conquering further abroad into italy or wherever else
In EUV if you play as Castile by the time you unite Iberia you'll probably have a full fucking century more to wait until tech unlocks to do the colonization game, assuming you don't get to discover the New World at a retarded date like 1392
