Necromancer builds are more focused on zombies than skellies but can include both. You usually go into shroomer druid as well since they have spore zombies, but there are loads of summons you get from the playthrough, outside your build.

You only need one level in Warlock for Hexblade and Booming Blade, unless you really want the short rest spell slots, in which case you'd take 3 levels to make sure those are second level spell slots for use on Misty Step, Darkness, or Mirror Image.

6 in Paladin is good for getting your extra attack and Aura of Protection, but you can get away with 5 for the extra attack on its own if you don't have a melee-centric party since the aura range is small.

At the leanest, we're currently at 6 levels, let's take a quick look at the two other Charisma classes and see what they can offer:

Sorc

3 levels gets us 6 spell slots, 2 metamagic options, and some whatever spells

Bard

3 levels gets us College of Swords for the very fun attack actions and 6 spell slots to use on smites.

For a melee Charisma character with some casting, I'd recommend:

1 Warlock (Hexblade, Booming Blade)

5 Paladin (smites, extra attack, and a feat)

4 Bard (college of swords and a feat)

And do whatever you want with the remaining 2 levels, I guess. Fighter for Action Surge or more Paladin for aura and a subclass feature at 7.

The game is piss easy as it is. Quality of life is not "cheating". I'm not microing six million reanimated jews every turn. I could beat the game without resting a single time anyway, so it hardly matters. Plus, you can summon like 10 things without even needing a corpse, purely through campaign items.
Also, you can spec a mule character specifically to carry corpses for you, if it's such a pain to do it yourself. If you mod it so summons do their own thing, it's not even a tenth as tedious as the average single turn in combat as a summoner.

Both Tactician and Honour mode are easy as hell. The only way to actually have a challenge is actual honour rules and not using any of the busted multiclass options, item effects, elixirs, or abusing resting. Even with a mod to increase enemy HP by 50% compared to regular honour mode, and long rest cost by a factor of 3, the game only becomes marginally difficult. That's why my most recent co-op playthrough also had a no dedicated healers or full casters stipulation.

I guess their point is sort of that a fair amount of players doesn't even bother putting in the minimum level of character justification and just plays their characters like they're regular paladins anyways?

Trust me, I've seen my absolute fair share of utterly obnoxious DORF players even in the modern day scene
There's people who play dwarves for the purpose of playing dwarves and they're often just as bad as people who exclusively play tieflings, though for entirely different reasons

DMs suck anyway. CRPGs are a way better medium than traditional D&D. Imagine some fat neckbeard who projects his lurrid sexual fantasies on the girlfriend of one of the regular players who decided to try D&D out for once and make a character, the DM wheezing as his heart races whilst he explains that her character is being molested by the tavern bouncer for causing a ruckus (that she didn't even cause). And that's just ONE example. Other examples include the players entering a chapel, one player asking to investigate it for a description of what it looks like, the type of stone used to build it, and so forth, and the DM being a lazy fuck and just deciding that the skill check is 1-2 points higher than whatever dice the player rolled. It's all BULLSHIT

Most NPCs in BG1 leave the map after you finish their quest and disappear from the game forever so there's no consequences to killing them for extra experience. That doesn't mean you're required to kill them.
