Most people watched it because actually playing it is an obnoxious chore, and it's violently over-represented in "fan" works specifically because nobody actually played it and it's the "secret hard route".
The same is true of the weird route shortly after it was discovered and concurrently spammed.
To a degree that there's people that legitimately barely even know that Q5U4EX7YY2E9N is the main antagonist of Chapter 2 in secondary media.

I have never understood this argument about genocide. It actually persuaded me away from doing it at launch, but when I finally played the route I found it only takes like 20 minutes tops to clear each area. The only thing that could be called obnoxious is the boss difficulty, but the challenge of it makes that fun too. Doubly so with snowgrave, theres like what, 30 monsters to kill total? I'd argue grinding money in a pacifist route is more of a timesink than genocide

The whole route is intentionally half-assed. Hell, Toby Fox went and replaced Sans' theme with Megalovania just to make it feel even more half-assed. Too bad no one got the joke.

There are 20 enemies in each area to kill on a genocide run. To kill an enemy rarely takes more time than sparing them, even moreso the case as you go on. And if you're pacifist run is your first time through, you are probably running into tons of enemies backtracking and exploring the maps. I dont see how one is a slog and the other is normal. Yes, the music cutting off and countdown makes it less fun. Yes it is more monotonous to kill enemies than to pacify them. Im not saying its as entertaining as the pacifist route, but the intentionality involved makes it interesting to me. Video essays will talk like you're spending hours going back and forth to kill in silence, and I think that is more dishonest than anything I'm saying
