Just about all lore related to dragons in Skyrim was new, most notably for that guy's point, the idea that the shouts are a dragon thing, in previous games it was described as a natural Nord ability related to Kyne.

It's a retcon from Morrowind. In Redguard, there's specifically a halfie (atleast) and in Skyrim there's the Emperor Plegius who you can see is part Human (probably Imperial) part Altmer not to mention the existence of the Bretons. For a while, the Hlaalu in Daggerfall also had mixed features (but they were actually changed in real time to be more Dunmer, I think the lore around them changed as well) I think this retcon is no longer the case, but the sheer sludge of the many retcons that Morrowindia inflicted on the series still lingers to this day like a bad smell.

There is no reason to lie about Skyrim being snowy. Even in the Bruma pocket guide, they say that Bruma's climate is closer to Skyrim than to Cyrodiil, why would they lie about their own county? And it's understood that this is accurate on account of Oblivion.

Bruma is understood to be a Nibenese county, but in truth it is more Nord than Nibenese, on account of its close proximity to the Skyrim border

Oblivion/Skyrim map design is not all that different to battle royale map design where they just take one map and then separate it into multiple different isolated areas that are differentiated by gimmicks, climates and seasons. You can tell it's what they tried doing with Fallout too to varying degrees of success; Fallout 4's map for instance is separated into the core being city ruins, the north being mostly stretches of rural plains, the glowing sea being a hazardous zone, etc.

Hammerfell is probably one of the more Geographically diverse regions, it has Dune deserts, Mediterranean coastal regions, subtropical coastal regions, temperate and warmer rainforests and a large and relatively cold mountain range in its north eastern third that will look like Skyrim or at least the Bruma region of Cyrodill.

High rock is heavy forest around daggerfall turning to light forest at Camlorn (plus a bit of swamp where the transfer happens), then the mountains around shornhelm are pretty rocky, Wrothgar is boreal tundra.
Hammerfell is 50% sandy desert with some rocky desert in the northern mountains, a lush rainforest oasis north of taneth and savannah north of Rihad.
Then you've also got the area around Orsinium that's just a less forested version of the Reach.

Yes, holds and biomes are linked together. And there's a lot of asset reuse, it's 2011 game made to run on a system with 256MB of memory. Skyrim's biomes are still biomes.

The saints of the sword are described in lore to be poets and artisans who mastered the way of the sword to much degree, and are described to have continued with their poetry and craftsmanship. So it wouldn't be too much of a stretch to say that these "songs" are just different swordsinging techniques written in a way the ancient yokudans would've written it, in songs and poems.
But you have a point about the sword itself singing, maybe these different techniques could make their own distinct sound.
